"We did the winery visit followed by the wine tasting experience. The tour was guided by an employee of the place, who was very knowledgeable. It was a very informative tour. Concise and entertaining. The building is super beautiful and the smell of the place is amazing."

"Our guide today did a great job, despite some other visitor who had a complaint about the guided tour being bilingual English/Spanish. The guide was very professional and handled the situation correctly. Since this other customer - a lady from the US - had complaints about the guiding being in English, the guide solved this efficiently by giving the explanations first in Spanish, and then in English separately for those who were interested. We also got very good treatment and a very informative tasting of jerez wines. The guide should have 5+ stars for her job today! I highly recommend this place for anyone who is interested in knowing more about these wines."

"I recommend everyone to do a sherry tasting here ! We had an English tour from Maria, and she explained everything perfectly. The bodega itself is very nice and beautiful as well. We got to taste 5 sherry's, all 12 years old, they were delicious (especially the sweet ones for me). She also let us taste two brandy's, vermouth, and the 5 year old PX because I was interested in the difference (it is really good too, can't wait to make some rich sauces with that one!). We had a tour at a more known bodega (lustau) the day before which left us a bit disappointed, but Maria made up for it and more ! Highly recommended!"

In-depth insights and expert knowledge
The Art of Sherry Production
Visitors can learn about the different grape varietals used, primarily Palomino, Pedro Ximénez, and Moscatel, and how they contribute to the final product. The aging process, whether biological (under a layer of yeast called 'flor' for Finos and Manzanillas) or oxidative (exposed to air for Olorosos and Amontillados), is a key element that shapes the wine's profile.
The bodega's historic cellars, like Bodega Bertemati and Bodega El Cuadro, are not just functional spaces but also atmospheric settings where these wines mature. The unique microclimate of Jerez, with its chalky soils ('albariza') and sea breezes, is essential for cultivating the grapes that produce these exceptional wines.
Exploring the Bodega's Heritage
The bodega's connection to the Bodeguero Andaluz, a dog breed historically bred to protect wine cellars from rodents, adds a unique layer to its narrative. This tradition highlights the deep-rooted relationship between the land, its produce, and the creatures that have coexisted with it.
Visiting Bodegas Díez Mérito offers a chance to immerse yourself in this history, walking through cellars where time seems to stand still, and the air is thick with the scent of aging wine. It's an experience that connects you to the enduring legacy of sherry production in the Marco de Jerez.
The Sherry Tasting Experience
The tasting experience is designed to showcase the diversity and complexity of sherry. You'll learn about the different aging processes and how they influence the wine's aroma, flavor, and texture. Many visitors appreciate the opportunity to taste older, more complex wines, such as VORS (Very Old Rare Sherry), to truly understand the depth of these wines.
Beyond sherry, tastings may also include other products like brandies and vermouths, offering a broader taste of the bodega's offerings. The intimate setting of the tasting allows for questions and a deeper appreciation of the craftsmanship involved in each bottle.
