They started with vodka, and that remains their “hero” product, with four different infusions, all inspired by New Mexican ingredients lavender, pecan, roasted green chile, and red chile. In the past couple of years, they have also developed a tasty whiskey with naturally occurring notes of vanilla and caramel derived from the local ponderosa and pecan bark they use to infuse it. Not only are all of these products sourced from local family run farms, Rolling Still also distills everything using 75 million year old water collected from a glacial moraine in the Sangre de Cristos.

I was eager to sample their vodkas, in part because this women-owned business is an entrepreneur’s dream, having been created by two friends who met in the Ski Valley years ago and still work together today. Nicole Barady and Liza Barrett told us that they themselves are “not really drinkers,” and so they created their flavored spirits to be smooth and friendly to the tongue. Sipping samples, I fell for the peppery, warm red chile and the still subtle but bolder pecan, made from nuts grown in Las Cruces.

Rolling Still Distillery + Lounge: Green and Red Chile Infused Vodka, need I say more?!. The past few trips, RS has been our go-to for unique, refreshing cocktails and mocktails. Rolling Still has it all really…relaxed Taos vibe, great location right off the plaza, and tasty bar menu + chocolates.

In early December, the Rolling Still Lounge hosts a Holiday Bazaar featuring local artists and makers. As the name suggests, this event is held at a distillery, vodka specifically. So in addition to the art market, they offer seasonal cocktails made with their spirits, live music, and more.

We stopped by The Lounge by Rolling Still Distillery, a tasting room for the woman-owned distillery dedicated to locally grown botanicals and spices. We drank down the macho mule and the hot n dirty gladly. We also tried a local single malt whiskey called Colkegan which was really good!

The night was capped off at The Lounge by Rolling Still Vodka. This infused-vodka tasting lounge which is women-owned, started by two friends, has grown into a beloved spot in Taos. It encapsulates the spirit of the town – a place of community, art, and endless magic.

This cocktail bar meets distillery offers fine tonics and cocktails as well as homemade liquors. The ambiance of the Lounge is upscale and elevated with comfortable 1950’s style retro furniture, dim lighting and a casual speakeasy vibe. Not much of a drinker?.

Rolling Still Distillery specializes in crafting delicious vodka here in Taos. The Lounge serves as their tasting room, and you can experience their unique flavors in a relaxing adobe atmosphere. Live music is performed every Tuesday and Thursday.

They use artesian water from the local Sangre de Cristo mountains. The best part is their extensive list of mocktails, and how creative and accommodating the bartenders are. They also offer small bites to eat, some of which are gluten-free.

Don Quixote Distillery and Winery is located in Pojoaque just a bit outside of Santa Fe. They are the oldest distillery in New Mexico. They have a blue corn bourbon and vodka.
