A relative newcomer to Steamboat Springs’ dining scene, Aurum Food & Wine first opened its doors in late spring 2014 with owner Phillips Armstrong and executive chef Chase Wilbanks at the helm. Chic but unpretentious, Aurum Food & Wine boasts a prime location in downtown Steamboat Springs, with seasonal new American eats like hoisin BBQ duck wings and eight hour braised short rib with wild mushroom faro risotto waiting to delight diners, while a spacious deck with comfy couches and a fire pit overlooking the Yampa River is perfect for sampling a glass or two from Aurum’s extensive wine list.

Steamboat has one of the most vibrant dining scenes west of Denver with a ton of options for everything from fine dining to burgers and brunch. Right now, takeout, delivery, and dine-in are all available. Come spring, summer and fall, you can stroll from the 5th Street bridge over the Yampa River on the corridor’s east end to its western end at Little Toots Park, with the sidewalk-lined street offering everything you need for an afternoon or evening’s outing. Stop on the bench at the new riverside park at 6th Street to decide where to dine, or stroll over the river on the 10th Street bridge to take in the Yampa against the backdrop of Mt. Werner. The options are as endless as the pink clouds floating by at sunset: the riverside decks of Aurum, Taco Cabo, Sunpies and E3 Chophouse; or perhaps the quaint streetside patios of Carl’s Tavern, Otto Pint, Mountain Tap Brewery, Steamboat Meat & Seafood Company or O’Neil’s Tavern and Grill.

Luckily, Steamboat Springs has a lively après scene — no matter the time of year — and restaurants like the riverside Aurum and the dive T Bar are among the most popular. Hankering for a little more of Steamboat history, I opted for a visit to Laundry Kitchen & Cocktails, where, after dining on wagyu ribeye with beets and blue cheese fondue, I followed general manager JJ Johnson to the back of the house, where historic photos of the century-old building in its former life as a laundry were on display. “See how they all have their hands behind their backs?.

For those who know the Aurum in the town of Breckinridge (another of my favorite Colorado destinations) or the other popular restaurants run by Destination Hospitality Group (Periodic Table, Table 70, The Carlin), this is probably not a surprise.

Aurum is among the newcomers to Steamboat's dining scene that believed there was a food culture just waiting to be tapped in this old ranching town. For dinner I headed to Aurum, one of my favorite restaurants in the state. Usually I dine on the deck so I can enjoy the Yampa River, but it was raining so I dined inside. I started with an “As You Wish” gin cocktail and dined on a jalapeño corn soup special, “Bee Grateful” salad, and pan seared Alamosa trout.

It’s certainly hard to pick the best of the ‘Boat when we, at Simply Steamboat, think that all of our community businesses are pretty darn awesome. But, everyone loves a little annual friendly competition and those that stand head and shoulders above the rest deserve a nice little plaque and a fabulous party.
