It’s impossible not to get a little Willy Wonka-like when stepping into Bakery Nouveau (especially the flagship Burien location), with its shelves full of French bread, rainbows of macarons and chocolate in the case, and the smell of fresh-baked morning pastries wafting from the oven. Whether it’s a sweet signature twice-baked almond croissant or savory junction croissant with scrambled eggs, ham, bacon, cheddar, and béchamel, the baking here is literally gold-medal winning—in the 2005 World Cup of Baking, of course.

We’d argue that croissants have no business being part of a breakfast sandwich—but the Junction from Bakery Nouveau is a strong counterpoint. Inside the light casing are scrambled eggs that spill out in fluffy tufts, alongside ham, crisp bacon, white cheddar, and bechamel, with a cheesy crust on top to tie things together. That may all sound like pork and dairy overkill, but trust us—it works.

(We would have loved to sample more had time allowed; as it was, we scattered to these 10 on the same morning, then sped to my home to taste the croissants while they were still fresh.) If the words Coupe du Monde de Boulangerie mean anything to you, run, don’t walk to Bakery Nouveau, the beloved bakery owned and operated by William and Heather Leaman. There are three Bakery Nouveau locations, but for those staying closer to downtown, the one on 15th Avenue East is the closest one. This French bakery has more than just breakfast items and is a beautiful, white, and light wood-colored bakery. You can order at the counter and then go about your day or eat at one of the small tables they have.

Although Bakery Nouveau is not a full-blown dessert bar, you can still find many items that will curb your sugar craving. Thanks to the flaky chocolate stuff croissants, pristine-looking cheesecakes, and macarons lining the shelves, Bakery Nouveau has made my list of best Seattle sweets in town. But be prepared to wait for your desserts.
