Reviews Summary

Archipelago offers an exceptionally unique and memorable dining experience, blending Filipino heritage with local Pacific Northwest ingredients. Diners praise the creative dishes, the deeply personal storytelling, and the intimate counter setting. While expensive, the flawless execution and warm service make it a worthwhile splurge for special occasions.

"We went to Archipelago on a weekday for dinner, it was definitely special. All the dishes here were full of creativity and presented aesthetic. Combinations of various ingredients and spices brought out the unique texture and tastes, especially a plate called Salvador Del Fierro. We didn't expect the savory sauce mixed with rich chocolate and spice balanced well with prawns and vegetables. We enjoyed hearing all the historical stories and inspirations behind each creative dish. As for the price, it's surely on the expensive side, but for the special occasion, this restaurant is a good option."

"This is an extremely special restaurant. It is an honor to be able to dine at archipelago. I visit Seattle once a year and was lucky enough to pre snag up a reservation to their cozy world class restaurant. From start to finish, expectations were exceeded. This coming from someone who works in the fine dining food industry. Obviously the food was amazing, thoughtful, unique, and most importantly…Filipino. But what made this one of the best dining experiences was the staff, and the STORY. This is focused themed dinner with a purpose. Not merely appealing to taste buds. But pushing Emotion, thought provoking, and neighborhood presence in the Filipino community. This is a show. Attention to detail is their mantra. Every guest is special to Archipelago. The wine pairing is funky and fun. But enhances and doesn’t detract. All subtle yet beautiful. Thank you so much!! You would be lucky to dine with archipelago."

"Flawless execution of dishes and service. They were so careful about my pregnancy restrictions and I never even had to ask if anything was safe for me. They were so friendly and welcoming and of course we so enjoyed the food, that, in many aspects, were brand new flavors for me.
The dishes were bold and creative, yet found a way to be nostalgic in some ways to me. What a wonderful place, I hope to return to again and again."

The 14 Best Filipino Restaurants In Seattle - Seattle

Archipelago has given us a multi-course tasting menu experience that is 100% Filipino and simultaneously 100% Pacific Northwestern. All of the meat, seafood, and produce are exclusively sourced from this region, which means you'll eat a caramelized squash condiment with your lechon instead of banana ketchup, or sinigang with local rhubarb broth instead of tamarind. Beyond that, their incredible food paired with robust history lessons have brought actual tears of joy to customers' eyes.

Just eight people per seating file in from Rainier Avenue to sit at Aaron Verzosa’s kitchen counter. What follows is a 10-course meal that breaks Filipino flavors down to their essence—in both flavor and cultural context—and builds them up again using only ingredients from the Pacific Northwest. That might mean a bread course of heirloom wheat pandesal with shallot butter, miki noodles with Dungeness crab and bacon marmalade, and clever shape shifts, like sinigang whose tamarind flavor profile gets replicated with puckering accuracy thanks to Oregon cranberries.

Back on the mainland, Archipelago owners Aaron Verzosa and Amber Manuguid articulate their message in a far more direct fashion: Their nine-course tasting menu functions as an introductory course not only to Filipino food but to the history of the Filipino community in the Northwest. The pair met in college where both took classes in Filipino Studies, with Manuguid eventually majoring in fine arts and moving on to a career in experience design.
