Within a short, pretty stroll of the Avenues and Capitol Hill, this outpost of the original, nationally acclaimed Handle restaurant in Park City turns heads with its stunningly plated, locavore-driven cuisine and a fetching interior with marble-top tables, a wood-beam ceiling, and a gleaming, tiled open kitchen. What's served on any given night varies according to what's in season, but you might encounter truffled agnolotti pasta filled with Swiss chard, corn, and goat's whey cream or slow-cooked pork shank with carrot-frisée salad, whipped ranch dressing, and apple butter.

HSL executive chef/owner Briar Handly is one of Utah’s most talented and innovative cooks, as evidenced by creations such as his General Tso’s-style cauliflower with kohlrabi, or his breaded olives with smoked quail, pine nut vinaigrette, and Meyer lemon. Of course, you can bar hop all you want, but Jim gives you 90 minutes of informed approaches to the spirit, a history lesson about Utah distilleries, and sips of whiskey, some of which you might not find at local bars. I0 would suggest putting something on your stomach before, and HSL is a top option close to his headquarters. At this downtown SLC restaurant chef Briar Handly always ensures there’s a fried chicken dish on the menu; the specifics change with the season but what doesn’t is that gloriously perfect fried bone-in chicken!. Briar Handly of Handle in Park City and HSL in Salt Lake might have started the fried chicken invasion of Utah—when HSL first opened, it was the fried chicken everyone was talking about. (Of course, back in prehistory, the first Kentucky Fried Chicken was in SLC, so we have a long history of fried.)

What to order: The hearth roasted carrots, the buttermilk biscuit, the flatbread, the flat iron and the pasta. What’s it like: It’s an upscale American restaurant with locally sourced ingredients. There’s no official dress code, and this restaurant is known for its intricate plating of meals.

HSL is endeavor #2 for Chef Briar Handly, with #1 being his wildly successful Handle restaurant in Park City. Handly has brought Chef Craig Gerome as chef de cuisine. I don’t know Handly very well, but anybody smart enough to get someone as talented as Gerome has my respect.

I use to visit HSL often but over time it has become more disappointing. I ordered red wine and it was cold. The burger was raw and made my partner sick.

SLC is great, and would second a trip to High West, the actual distillery up by Wanship past PC is a cool experience.

HSL — Handle’s sister restaurant in Salt Lake City — was also where the Barlows had their date night in Episode 5.
