(Maki aficionados should read the descriptions of the sushi rolls carefully. At the Pearl, the Philly roll combines crab stick -- i.e., surimi -- shrimp and cream cheese while the combination often called "Philly" in Washington, smoked salmon and cream cheese, is here called a Washington roll. The Ocean City roll combines cooked tuna and cream cheese, a not-so-subtle poke at that more traditional grilled-seafood town; while the Rehoboth roll is a rainbow coalition of yellowtail, tuna, salmon, avocado, flying fish roe and crab.
