Share the RIME shellfish tower to start, or perhaps begin with Maine mussels or cheddar bay rolls. Entrees range from grilled whole branzino and dry-aged Niman Ranch porterhouse to seared halibut, roasted salmon, diver scallops from Maine, ahi tuna from Honolulu, and many more tasty temptations, plus a 10,000-bottle wine selection.

Rime Seafood + Steak: For fine dining it’s hard to beat Rime, the flagship eatery in the Forbes 4-Star St. Regis Deer Valley resort. The resort’s longtime chef Matthew Harris sources his meat and seafood meticulously from top vendors and pairs them with one of the West’s best wine cellars, over 10,000 bottles worth, a Wine Spectator Best of Award of Excellence winner. This is the second highest award the magazine bestows and one of only two in Park City, along with Tupelo.

As a consulting chef for the St. Regis Deer Valley, Matt does some heavy lifting, overseeing the culinary programs at multiple outlets including RIME, Brasserie 7452, The St. Regis Bar, La Stellina, Astor Bar, The Vintage Room, and more. Oh, and did we mention that in 2015, Harris and his wife Maggie Alvarez opened their own restaurant, tupelo Park City?. They also operate RIME Raw Bar at Deer Valley Resort during the winter ski season.

If you want my number one recommendation for a fabulous steak and all round experience – head directly to RIME. The fine dining spot in the St. Regis Deer Valley hotel has it all: expertly drilled staff, a great wine list, sublime mountain views – and yes – exceptional steaks cooked impeccably. The steak menu has everything from petit files through to caveman like tomahawk steaks that you’ll probably need to share.

The 45-page wine list at RIME in The St. Regis Deer Valley is an eye-popping one. Thankfully, a very skilled sommelier named Polina Jensen is on hand to help guests navigate it. You can trust her when she recommends a glass of Trimbach Gewürztraminer to enjoy with the spicy and smoky Octopus a la Plancha or a sampling of the Ada Nada Cichin Barbaresco Riserva with their Snake River Farms Wagyu Steak.
