Let us count the ways: This Echo Park shop serving Detroit-style–leaning pizza offers square slices with pillowy, flawless-hydration dough that practically springs back after every bite. The ratio of toppings to dough is always spot on, and so are the flavors—they range from the classics and expecteds (pepperoni with red sauce, basil and cheese) to weekly specials that always have us checking for entirely new creations, and some of our favorites, which we greet like an old friend whenever it’s their turn in the rotation again. Chef Aaron Lindell’s wild creations include options like the pierogi-inspired Polish Yacht Club, which scatters potato, lemon cream, caramelized onion, green onions and bacon over the cheese-crusted dough.

Detroit-style pizza became a thing outside of the Motor City in the last 10 years with spots like Via 313 in Austin and Emmy Squared in Brooklyn. Since then, a number of chefs all over the country have tried their hand at interpretations of the deep-dish, sauce-on-top style. Launched in 2020, this pizza pop-up bills itself as “Glendale’s #1 least authentic Detroit-style pizza.” Known as much for its take on the Midwest-style pizza as it is for Hannah Ziskin’s incredible desserts (aka House of Gluten), you can order pies and sweets for pickup on Friday and Saturdays.

Quarter Sheets makes some of the best pizza in LA, but ignoring their desserts would be a huge mistake. The specials here change weekly, but we’ve never come across a grapefruit tart, apple galette, or triple-berry cheesecake slice we didn’t fall for. Quarter Sheets’ triple-layer princess cake is especially dreamy, with its shockingly light layers of olive oil cake lined with raspberry jam and whipped mascarpone cream.

The word is out on this Echo Park spot, so expect a wait, but one bite of their inch-thick, pan-style pizzas makes it all worth your while. Baked to order, they're prepared with flavorful sauce and quality ingredients. Pepperoni is a classic choice, or opt for the pimento grove, a vodka sauced pizza topped with olives, 'nduja and cheese. And, while you might not expect to get serious pastries at a pizza shop, don't leave without trying at least one of Hannah Ziskin's pastries. The origin story of my favorite pizzeria-that’s-more-than-a-pizzeria in California began when Aaron Lindell and Hannah Ziskin met while working at Cotogna in San Francisco. They moved to Los Angeles in 2018 and soon after Ziskin became the pastry chef at Melissa Perello’s M. Georgina, a short-lived casualty of the pandemic. The couple regrouped with a pop-up called Quarter Sheets: Lindell, raised in Michigan, baked crackly-edged rectangular pizzas in a Detroit-ish style, while Ziskin tapped into an almost freakish genius for layer cakes stacked with custards, fruits and complex buttercreams.

Since opening in 2022, Quarter Sheets has become one of the most locally-loved pizza joints in Echo Park. Helmed by chef-owners Aaron Lindell and Hannah Ziskin, this retro pizza parlor in Southern California specializes in pan-style pizzas that are baked to order and made with top-notch ingredients. From classic pepperoni to a vodka-sauce pie, the pizzas are comforting and hearty, but it is Ziskin’s beloved cakes that round out your meal.

What started as a pop-up during the pandemic, is now one of the most sought-after brick-and-mortar pizza shops in town. There are just a few flavors to choose from—our fave is the Red Top with mozzarella, red sauce and Grana.

Quarter Sheets Pizza specializes in pan-sheet pizzas along with creative cakes. Quarter Sheets originally started off as a pandemic pop-up, but has since set up shop with a more permanent location in Echo Park that loyal regulars have come to love. Patrons can come up for some thick, square slices Wednesday through Sunday from 5:00 p.m.
