Bringing on Chef Mike Royal—a humble, genuinely kind soul whose love of metal music and carbs makes for a perfect pairing in the Downtown restaurant-meets-macabre art gallery—was one of the best decisions The Two Jeremys could have made: Creating yeasty wonders that act as odes to the dark side, Royal has genuinely refined the already-rad pies and taken them to a heightened level of greatness. And in all frankness, the pizza has never been better at The Horseman, especially across the past year, where Royal has truly perfected both the dough and the amount of toppings he can dare himself to pile on his pizzas.
