Reviews Summary

Carbone offers an exceptional Italian-American dining experience with standout dishes like the Spicy Rigatoni Vodka and Veal Parmesan. While the food and service are consistently praised, some diners mention the tables can be uncomfortable and reservations are extremely hard to secure. Despite these minor drawbacks, many consider it a favorite and a must-visit.

"Amazing food and vibe, very nice and attentive service, lamb chops were really good and juicy and the sauces complimented them well. The breads were nice and warm and very very tasty, they gave a decent serving of parmesan cheese to go with it and it was really good. The portions are pretty big and it's mostly family style so you can order a couple dishes and share. The pasta portions were good for one or two people but the entree like the chicken dish was huge."

Ishan Kaul

"This ended up being our favorite restaurant of the entire trip—we loved it so much that I’m already planning to come back next month!

I’ll admit, I was a little nervous when I saw the low Google rating. But I also noticed how hard it was to get a reservation, so I took a chance. I did have to wait about 30 minutes even with a reservation, which wasn’t ideal—but everything after that more than made up for it.

The food was incredible. I loved the spicy vodka sauce, and the veal Parmesan (especially the bone) was a standout. The drinks were just as impressive—hands down the best espresso martini I’ve ever had.

Service was top-notch. Richard and William were both attentive, warm, and fun—they even did a little whiskey tasting with us. They really helped make the night special."

Landy Lin

"One of the best Italian-American restaurants I’ve been to and that’s saying a lot! The veal here is absolutely exceptional. Cocktails are great, and service is impeccable. They could definitely use some help in the interior design department as the tables are quite uncomfortable. Although it’s a cool look and aesthetically pleasing, the uncomfortable seating is to the point where it takes away from the experience. I’ll still give this a five star review because it really is that good. It’s of course extremely expensive but it’s a hotel casino in Vegas and that’s how they are these days. I hope they continue to pursue excellence in their menu because there are some dishes with some slight room from improvement, but most of all I really hope they improve their interior design. Specifically in the aspect of comfort."

Not all Carbones are made equal, but the Vegas outpost is one of the better ones. It’s the place for a fun, big night out that borders on immersive theater, where caesar salads get tossed tableside and waiters in red tuxes debone dover sole with the precision of a plastic surgeon. These dishes would stand on their own even without the performance, though—see: the nutty brown butter sauce that’s drizzled all over the fish.
