In June 2016, Texas chef Tim Love expanded his portfolio beyond the Lonestar State when he opened a third location of his flagship restaurant Lonesome Dove Western Bistro in the historic Old City neighborhood, in downtown Knoxville, TN. A former Knoxville resident, Love has strong ties to his alma mater city, having attended the University of Tennessee. At Lonesome Dove Knoxville, Love serves his famously unique Urban Western cuisine, featuring bold flavors, wood-fired cooking and unique wild game offerings. The menu features time-honored Lonesome Dove favorites alongside a selection of new, Knoxville-inspired dishes made with local ingredients.

The exterior of the Lonesome Dove in Knoxville’s Old City is a relic from a bygone era—in addition to serving as a saloon in the 1800’s, it later was a brothel, upholstery business, and ice cream shop—and the inside channels that vibe. Restaurateur Tim Love took the building’s history and ran with it, opening his third in a collection of Lonesome Dove-branded Western bistros after seeing success with the concept in Texas. The menu is very cattle-forward and game-heavy with duck, black buck, rabbit-rattlesnake sausage, lamb chops, and elk foie gras all making appearances alongside hand-cut steaks.

This Old City building has just about as much history as charm, and its story started back in the 1850s with Irish immigrant Patrick Sullivan. The Lonesome Dove building was home to Sullivan and his family while he helped build East Tennessee railroad lines and the first Immaculate Conception Catholic Church. After fighting for the Union during the Civil War, Sullivan returned to Knoxville and converted the family home into a Cheers-like saloon.

The menu is full of locally sourced, seasonal ingredients so that each visit is different. Expand your palate with dishes like elk-foie gras sliders, rabbit-rattlesnake sausage and wild boar ribs. Main courses like the rabbit ravioli, Berkshire pork chops served with grits and crispy onion as well as sweet potato succotash-chili relleno with a black bean emulsion, Manchego cheese, chili pepitas and an avocado corn salsa will warm your soul.
