An unashamedly American bistro, Trio is the brainchild of owners Will Bradof and Paul Wireman. Both Bradof and Wireman have impressive employment histories – Bradof even spent time learning at The Culinary Institute of America – before meeting in Jackson’s Snake River Grill. After deciding to run their own joint and opening Trio in 2005, the two men settled on a menu that exhibited the best in American culinary values.

Try a burger and cocktail at Local; blue cheese waffle fries and a glass of pét-nat at Trio; oysters and bubbles at The Bistro; and several tapas plates at Bin 22 (with a bottle from the wine shop inside the restaurant). Or you could have… sushi in a mountain town?

A heaping order of sweet potato fries or waffle fries with a gorgonzola cheese sauce at Trio is a great late afternoon snack at one of the hot spots in Jackson Hole (if you want to splurge, eat dinner there and enjoy their creative and fresh dinner options), that is complimented by their innovative drink menu and respectable wine by the glass selection. I think 4 out of 5 locals will agree that the best deal in town is the Grilled Cheese Sandwich at the Rendezvous Bistro. This restaurant is among the best in the valley, the service and freshness of their menu is outstanding, and their wine selection is pretty fantastic as well.

Jiggy’s career spans from front of house work at The Mangy Moose, Koshu, Local and Trio, to back of house at The Rose and as the Executive Sous Chef at Maho Catering. He works closely with Kampai’s Chef Chris Massad (of San Francisco’s Akiko’s, Pabu and Nobu) to bring the concept to life. “Our goal is for the food to be the main focus, but want to ensure that each and every detail from space to cutlery lends to giving our guests that intended, curated experience,” said Massad.

Equal parts elegant and tasty, Trio is a staple of downtown Jackson. Trio's chefs love to experiment and get creative with their dishes. Visitors rave about the seasonally changing menu's variety and especially love options like the strip steak and risotto.

Trio Bistro impressed us so much that we ordered takeout from them two nights in a row!. Their asparagus risotto is perfectly prepared. Since I make a pretty mean zucchini and pea risotto myself, I tend to be hypercritical of this dish at restaurants.
