HeightsHometown heroes Bobby Heugel of Anvil (which, might we add, hits the mark with its frosty cocktails and classic spritzes) and Justin Yu of Theodore Rex fame are two of the masterminds behind this Heights powerhouse, which rocks both a stunning Sunday brunch and a pleasant patio to enjoy it on. In the kitchen, Mark Clayton and crew whip up scratch-made breakfast-inspired dishes like Dutch Baby Pancakes bathed in maple butter, a Wagyu Shortrib accented with creamy hollandaise and zippy salsa verde, a delightfully rich Oyster Mushroom Hash, and Lè Brunch Burger, in which a stout beef patty comes piled with cheddar, lardons, dijonaise, and an oozing fried egg.

Brunch at Squable in The Heights is somehow both over the top and classy all at the same time. We recommend sitting at the polished brass bar (to get drinks faster). Start with a giant boat of spongy focaccia slathered in ragu and a fried egg, or a tiny mountain of hash browns smothered in au poivre hollandaise and trout roe.

Neighborhood canteens really don’t get much more tasteful than this restaurant that merges American and European culinary sensibilities on the western edge of the Heights’ 19th Street thoroughfare. The place starts filling up right at weekday happy hour (4-6 p.m.), when all drinks — including the fetching Terry’s martini, with its ice-cold mini carafe and accoutrements, and thoughtful bottles of wine, like a versatile, dry chenin blanc from Vouvray — go for half price. Chef Mark Clayton’s menu tweaks happen often enough to keep a regular clientele interested; one day’s bucatini with clams is another day’s duck-and-pork ragu.

Squable: Though I wouldn’t hesitate to take my daughter to Justin Yu’s Theodore Rex, if I could get a reservation, many parents might feel more comfortable taking their children to the more spacious and semi sister-restaurant Squable. Everything at Squable is shareable, so kids and parents can sample several dishes and find something they like. The kids will likely enjoy the maltagliati pasta with buttered braised onions and Parmesan (basically, it’s a more sophisticated take on that quick kid classic, pasta with butter) and most will enjoy the roast chicken with fried bread dumplings.

Squable in the Heights – One of Houston’s hottest newcomers of 2019 got even hotter when it began offering Sunday brunch. Squable comes from industry vets Bobby Heugel (Anvil) and Justin Yu (Theodore Rex), with Mark Clayton and Drew Gimma being the genius behind the kitchen. Definitely start with some house bread (in the form of pistachio buns, chicken fat biscuits and more) before moving on to delightful things like homemade yogurt, soft scrambles with caviar and crème fraiche, confit egg yolk carbonara, and disco fries with cheddar, pickles, and chicken drippings.

As one would expect given the pedigree of its owners, both of Bobby Heugel and Justin Yu’s Heights establishments take their cocktails seriously. At BLT, look for menu staples like the Salty Cat (gin and grapefruit) as well as more eclectic concoctions like the recently-introduced Mole & Maguey, a savory sip that features epazote-infused mezcal with mole port. Squable’s menu features creative spins on classics such as the Terry’s Martini that uses two kinds of gin and two kinds of vermouth to achieve a properly balanced flavor.

A sibling restaurant from the team behind Anvil, Theodore Rex, and Better Luck Tomorrow, Squable is a cozy neighborhood restaurant known for its casual European food with American influences. On a menu that includes baked oysters, beef tartare, and rabbit pappardelle, a standout is a French cheeseburger made with a stout beef patty topped with melty raclette, butter and pickles, served with pommes frites. A full bar, wine, and craft beers, as well as zero proof cocktails round out the convivial, laid-back vibe.

Located by The Heights, Squable is a trendy and vibrant environment that gives visitors the feeling of comfort like a cozy neighborhood due to its casual decor and surroundings. In 2020, Katsaounis scored a major get when Drew Gimma left his post as co-chef of Squable restaurant to joint Bread Man as director of operations. In February, Katsaounis wooed Jess DeSham Timmons from her executive chef post at Cherry Block Craft Butcher to serve as the company’s foodservice sales manager. In the fall, Bread Man will move into a new 40,000-square-foot production facility in east Houston after quickly outgrowing its 4,800-square-foot shop.

Squable is what happens when European classics collide with Texan audacity. Under the direction of Chef Mark Clayton, the menu offers standouts like the French cheeseburger with raclette dripping down the sides and a potato gnocchi so pillowy it should come with a bedtime story. Set in a sleek, industrial-chic space, this Heights darling is perpetually packed, and for good reason.

The cooking is sophisticated, but the prices are eminently reasonable. The offerings, which have an American influence, are all over the place, but the quality is deliciously on-target. You may think you know succotash, but have you had the seasonal corn stew with green beans and a chicken-based “sauce espagnole”?

One of the reasons I wanted to make this list is to highlight not only my fave restaurants, but the diversity of Black restaurants. To me Squable exemplifies this. Chef and restaurant partner Mark Clayton does an amazing job creating unique dishes that you cannot get anywhere else.

If you’re a fan of Theodore Rex, you’ll be overjoyed when stepping into Squable. The same team behind the former dining powerhouse has ensured that delicious European favorites take on American influences for an unforgettable experience at this popular restaurant in Houston.
