Reviews Summary

Bar Maze offers a unique and refined omakase experience with innovative Korean-Japanese fusion cuisine and expertly crafted cocktails. Diners praise the impeccable service, artistic presentation, and the intimate atmosphere, particularly the bar seating. While some note the smaller portion sizes relative to the price, most find the experience to be exceptional and highly recommend it for a special occasion.

"Dinner for two seated at the bar - highly recommend as you get to watch everything going on in the open small kitchen. Restaurant is also small with seating for approximately 30 or so, with two sittings each evening from what I can tell. Overall, I have to comment on the precision of this restaurant: watching the small team (three chefs and three servers) coordinate and ensure an impeccable experience was entertaining in and of itself. We had the five course tasting menu with paired cocktails plus the bonus item (on our visit it was a $65 loaded baked potato). Everything was exceptional - food, service and experience. Everything was explained in detail and we left satisfied and not over full. I’ll note here some may have issue with the small portions vs price, and if that’s the case, this restaurant is not for you. But if you appreciate every detail from preparation to presentation, and you don’t mind paying for it, then you won’t be disappointed. I’ve never been to a restaurant with such extensive use of forceps!! All in all we’ll be back and highly recommend. We were told the menu is updated monthly, with the same general format being followed. After we arrived and parked we found that there were a few dedicated Maze parking spots right next to the restaurant."

"Such a wonderful restaurant! The people were so kind and accommodating for a good allergy even with their limited menu.

The food was SO GOOD! The omakase experience with cocktail pairing was seriously an incredible experience. All the bites were to die for and the drinks were great, but paired with the food, they were off the charts.

Highly recommend!"

It’s a perfect pairing: Michelin-credentialed chef Ki Chung and award-winning mixologist Justin Park, whose exquisite omakase menus match each course with a thoughtful, handcrafted cocktail. It doesn’t hurt that the restaurant itself is eye candy, with natural wood surfaces set off by indigo and brass accents and soaring two-story windows. Though the menu changes almost monthly, dishes you might see are the shrimp or smoked salmon toast, a luxurious wagyu donabe rice, and, reflecting Chung’s Korean heritage, oysters with white kim chee granita.

Best Honolulu Restaurants, Summer 2022

Since opening less than a year ago, Bar Maze has become one of Honolulu’s most coveted restaurant reservations. It’s the light and airy counterpart to Justin and Tom Park’s (no relation) dark and moody Bar Leather Apron. At the bottom floor of this sliver of a bar/restaurant, find a cocktail-paired omakase (a non-alcoholic option is also available), in which chef Ki Chung’s Korean- and Japanese-inflected dishes (think hamachi crudo that resembles naengmyeon) marry with Justin Park’s dazzling drinks.

Honolulu’s Cocktail Revival Moves Past Umbrella Drinks

In spite of this revival, Honolulu’s growing cocktail scene still draws less attention than that of bar-laden New York and much of the mainland, and corporate overlords can stifle staff’s creativity at popular coastline hotels. But Taibi says it’s catching up quickly, as there’s a want — and a need — for good drinks. The passion is there from both industry folk and guests, so now, it’s about shining a light on local products and doing things the right way.

Exploring the Best Local Restaurants in Honolulu

With Bar Maze, just as compact, they raised the bar even higher by hiring chef Ki Chung to collaborate with Justin Park on a combination cocktail menu. The constantly evolving omakase evokes the ocean with raw and thinly sliced Hokkaido scallop coins and a cake made with calamansi and green apple combined with a light cocktail of shochu, mango, elderflower, and citrus foam. Me Bar-B-Que is located in Waikiki and serves delicious Korean food.
