Mertens Prime opened in 2017 in the dining room of the original New Hotel Mertens, which debuted in 1914 and served guests through the 1960s. Mertens Prime incorporates elements of a classic French steakhouse and French quarter style dishes, offering such traditional dishes as Escargot, Steak Frites and Salad, and Chateaubriand.
