Chef and owner Linda Hampsten Fox has cooked around the world and spent time preparing food for celebrities like Dr. Jane Goodall, Dave Matthews, and Nancy Pelosi (not to mention raising her daughter as a single mom). With experience like that, it’s no surprise that she was able to bring her vision of an elegant, European-inspired eatery to fruition when she opened The Bindery in late 2017. Whether you stop by for Greek yogurt with mango, ginger jam, cashew-pepita, and coconut crunch and a pastry to-go from the market on a weekday morning or settle in for sophisticated dishes with a playful edge like the butternut squash and rapini risotto in the evening, The Bindery is a place that adds a dash of approachable elegance to the Mile High City.

Showcasing globally-inspired fare in LoHi, this hip-yet-elegant space dishes up cuisine that’s at once trendy and sophisticated—a combo that will surprise and delight the most discerning of palates. Why go: Any place with a dark chocolate waffle accompanied by thick belly bacon is a must-try, in our book. Decadence aside, menu options are interesting, thoughtful, and bold, from olive-oil fried eggs with house yogurt and lemon salt to toasted quinoa porridge with poached egg, mushrooms, brussels sprouts and cocoa nibs.

Humming with activity from early morning until bedtime, this ambitious yet welcoming café, bakery, and restaurant in a former book bindery plays the part of both a neighborly hangout for all ages and a civilized retreat for grown-ups. By day, The Bindery's market counter is lined with ever-changing pastries and pantry items galore. By night, the kitchen works its magic with the most uncompromising of seasonal ingredients and far-flung influences.

I love eating at Fish N Beer, a really sweet little place in the RiNo that has great oysters and beer!. For a [terrific] martini, extra dirty and in a beautiful glass, I head to The Cooper Lounge in Union Station. [It’s] elegant and transports you to another world outside the bustle of the city.
