What Travellers Say
Reviews Summary
Billy Can Can offers a captivating old-west saloon atmosphere and exceptional service, making it a standout dining destination. While many praise the steaks, cocktails, and appetizers like deviled eggs and cornbread, some reviews note the food can be overly salty, with occasional inconsistencies in preparation. The ambiance and attentive staff, however, consistently receive high marks.
"I stopped by Billy Can Can on an early Thursday evening and found it to be moderately busy, but not overwhelming. I was seated quickly and chose a spot at the bar, which turned out to be a great choice. The atmosphere is exactly what you’d hope for from a place that calls itself a “Saloon Extraordinaire” – a modern Texas saloon vibe with a touch of old-school charm.
I ordered the Billy Burger ($22), which features Texas wagyu beef, longhorn cheddar, Benton’s bacon, caramelized onions, Texas IPA mustard, and pickled jalapeños, served with hand-cut fries. The burger was solid — juicy, flavorful, and well-balanced with just the right kick from the jalapeños. The fries were exactly how I like them: crisp, golden, and seasoned just right.
The staff was friendly and attentive throughout my visit, contributing to an all-around welcoming experience. The place lives up to the enigmatic and stylish description from their menu:
“Confident and enigmatic, Billy Can Can is an artful sensationalist, a brooding bon vivant… slyly orchestrating every happening…”
Overall, Billy Can Can nails the atmosphere and delivers on quality. I’d definitely return next time I’m in Dallas."

"I had a great experience overall! The customer service was friendly and welcoming, and the atmosphere was amazing—cozy and relaxing. I especially appreciated that they dimmed the lights; it made the whole setting feel much more comfortable compared to being under harsh, bright lighting. The drinks were delicious and well-made.
However, the food was a bit of a letdown. Everything was extremely salty, especially the mashed potatoes and the sauce on my fish. It really overpowered the flavors, which was disappointing given how great everything else was.
Still, I’d consider coming back for the drinks and the ambiance alone—just hoping the kitchen tones it down a bit next time."

"I got there chips and dip and it was really good for the appetizer! Not worth the price but it was delicious! The steak however was disappointing. It was a 7/10 due to not having enough salt and no steak sauce. Overall the server was very attentive and the atmosphere was very calm."

Ten Essential Places to Eat and Drink near American Airlines Center
Cementing Victory Park as Dallas' trendiest new dining destination is Billy Can Can, a handsome, wood and taxidermy adorned eatery modeled after a late-19th-century saloon. The restaurant comes by way of Tristan Simon (the same guy who transformed Henderson Avenue into a restaurant hotspot) and offers a seasonal, locally sourced menu focusing on modern Texas cuisine. We're talking everything from venison tartare and crispy oyster sliders to hot fried quail, wild boar pasta and giant tomahawk steaks.
The Best Restaurants in Dallas Right Now
Tristan Simon’s latter-day saloon is the ultimate place to take tourists who request a “Dallas experience.” Think of it like if Fearing’s had a rebellious younger sibling who lived in a bachelor pad instead of a penthouse. The menu includes a crispy skate schnitzel sandwich, fried oyster sliders, a deviled egg tasting, “pulpo puppies,” and an extraordinary long-bone pork chop. Cocktails are shaken at an impressive carved wood backbar, and the wine list has savvy bargains and Texas treasures.

For a certain kind of tourist or visiting family member, this fancified, all-frills saloon in Victory Park is a guaranteed hit. It presents a dressed-up, Wild West atmosphere that verges on kitsch (and, in the name, crosses that verge), while serving up food and drink vastly better than the gimmick might suggest. An adventurous, affordable selection of wines and cocktails backs up pretty killer renditions of skillet cornbread, Texas red chili, hot fried quail and summer okra succotash.
Best Restaurants for Dinner in Dallas
Billy Can Can: I recommend the assortment of deviled eggs that come with blue crab, candied bacon, crispy country ham, pickled okra, pickled shrimp, and smoked paprika. The Billy Burger comes with texas beef, longhorn cheddar, benton’s bacon, caramelized onions, texas IPA mustard, pickled jalapeños, and hand-cut fries. The long-bone pork chop is whiskey-brined, served with braised mustard greens in a ham hock broth, dried apricots & leafy greens.
