As part of its $50-million renovation that took place last year, Park Hyatt Aviara Resort, Golf Club & Spa recently added three dining concepts—one of them being new signature restaurant Ember & Rye. This sleek steakhouse concept was created in collaboration with Chef Richard Blais, which he likens to a “not-your-parents’ country club-meets-modern steakhouse.” Highlights of the restaurant include a well-stocked whiskey library, an open-air terrace with views of the Aviara Golf Course, an outdoor grilling station, fire pits and an enticing menu of vintage steaks, fresh seafood and seasonal vegetables. And with the meats prepared over an open, wood-fired flame, even the snootiest of carnivores are sure to love Ember & Rye.

Carlsbad’s newest casual, vintage clubhouse setting offers views overlooking the 18 th hole of the Arnold Palmer inspired golf course at the Aviara Hotel. The chef, Richard Blais, is most recently known for being the first winner of Bravo’s Top Chef All-Stars and continues to make regular appearances as a judge on the show, along with making appearances on several other culinary competitions, and has impeccable culinary experience including training at The French Laundry. Here at Ember & Rye you can enjoy indoor or heated outdoor dining, one-of-a-kind craft cocktails from the full bar, private dining, and it’s also a good spot for groups and families.

Richard Blais, the Del Mar celebrity chef who helped launch Juniper & Ivy and the Crack Shack eateries in Little Italy before moving on a few years ago, will open Ember & Rye, a “vintage” surf-and-turf-style restaurant in March at the Park Hyatt Aviara Resort in Carlsbad. It will replace the hotel’s Argyle Steakhouse overlooking the Batiquitos Lagoon. The menu will feature locally caught seafood and aged steaks, with a good share of its ingredients sourced from West Coast purveyors and farms.

A Richard Blais restaurant led by executive chef and Filipino San Diego native Jon Bautista, Carlsbad’s Ember & Rye infuses its steaks, seafood, and seasonal vegetables with seasonings, ingredients, and cooking techniques from across the Asian continent. Try the “shaken beef” steak frites—it’s hard to upgrade a classic, but the addition of a rich, deeply savory, pepper-forward steak does the job. At $34, it’s a great way to backpack through Asia on a bit of a budget.

There are 6 food and dining outlets in total, withBaja-inspired Ponto Lago on the lobby level and Ember & Rye, the steak and seafood restaurant, at the golf-course, as the most epicurean. Culinary highlights from our trip include dinner at Ponto Lago—where I had a roasted branzino, served whole, with capers and cherry tomatoes—and the sushi at the lobby bar, Pacific Pointe.
