That’s absolutely the case at House of Better in Calistoga which happens to be housed at Dr. Wilkinson’s Backyard Resort and Mineral Springs, a retro-fabulous hot springs destination and hotel. The menu at House of Better is designed by Trevor Logan, previously of San Francisco’s beloved Green Chile Kitchen and Chile Pies & Ice Cream, and he brought his New Mexico-inspired, green-chile-appreciating fare north to Napa Valley.

This spot is part of the reimagined Dr. Wilkinson’s Resort, which gained a following in the ‘50s for its mud baths and mineral pools. It’s a great place for lunch or an early dinner that feels a lot like being at a cookout at your best friend's place with the added benefit of being waited on as you chill by the bonfires and play cornhole. New Mexican dishes like the green chile stew and flat enchiladas are standouts, along with the grilled fish tacos with jicama slaw.

The chef at this casual, family-friendly, mostly open-air spa restaurant promotes wellness via Southwest-inspired "booster food" like a quinoa-and-kale salad and bowls containing sautéed kale, red quinoa, green chilies, and avocado. To reel in the wary, House of Better hedges its bet with cheesy flatbreads and nicely spiced fish tacos, going full carnivore with a green-chili cheeseburger and pepper steak add-ons to nachos, enchiladas, and tacos.

The latter two are key because the reason you’re stopping at this tiny Calistoga spot is for the Southwestern-inspired cuisine, specifically the green chile stew, green chile burger, and the green chile apple pie, which may very well be the best apple pie you’ll ever eat in your entire life. Hidden inside the mid century modern-inspired Dr. Wilkinson’s Backyard Resort & Spa, House of Better is focused on providing hungry Wine Country visitors with nutritious meals that just so happen to be delicious!. Even better, House of Better serves both brunch and breakfast every day so you can enjoy Southwestern-inspired plates, like the red chile huevos rancheros or a breakfast protein bowl, all week long. While you might have wine on the brain, don’t miss out on one of their zingy brunch cocktails, like the pineapple + lemon Mimosa or the Irish coffee sweetened with maple syrup.

For those who don’t feel like baking, pies will be available at Cal Mart, Bella Bakery, and from House of Better, the soon-to-open restaurant at Dr. Wilkinson’s Backyard Resort & Mineral Springs. House of Better's pies are $34 each and include spiced pumpkin, brown-butter apple, lemon-buttermilk, Mexican-chocolate pecan; and pear-blueberry cardamom. Gluten-free pies are available, and $5 from every purchase will be donated to Napa Valley’s first responders.
