Nearly two years after Rootstalk opened its doors, Matt Vawter and team jumped on the opportunity to fill the suddenly available Relish restaurant space in the center of town. Radicato weaves Italy’s culinary traditions throughout its gorgeously plated dishes while linking Colorado farmers to curious diners. Radicato musts include the prime New York strip carpaccio and the classic cheesy, peppery cacio e pepe (find both on the happy hour menu served daily between 4 and 5 p.m.).

Located in a beautiful setting right on the Riverwalk in Breckenridge, Radicato focuses on classic Italian cuisine with a menu entirely handcrafted with a lot of care by the fantastic team behind the restaurant. Rootstalk was such a hit that Vawter opened Radicato, a more Italian and casual take on fine dining, this past June. The restaurant sits upstairs (come back in the summer for one of Breck’s best decks) and has all the energy of a well-loved gathering spot. We love sitting at the nine-seat bar and people-watching over bites of carpaccio, the homemade pasta (order the lobster bucatini with crusty bread crumbs if you see it), and any of the thoughtful veggie sides.

Rootstalk (which refers to Vawter returning to his roots) has been so successful that he opened Radicato, a more casual, Italian-leaning spot up the street, last June. (Radicato means “deep-rooted” in Italian.) Between the two spots, you can find dishes like crispy sunchoke salad with pickled mustard ($21), housemade reginetti pasta with pancetta, chanterelles, and walnut gremolata ($22), and pancetta-wrapped quail with creamy polenta and cacciatore ($41).

Some culinary standouts in town include Radicato, an Italian eatery helmed by executive chef and James Beard finalist Matt Vawter, and The Carlin, where Chef Zach Brace’s menu is focused on fresh, sustainably sourced seafood and woodfired entrées.
