And yet when it comes time for cocktails and Agustin’s signature preparation, the bar man reaches for that other style of American whiskey. He builds the Sierra Mar Smoked Old Fashioned using bourbon. Not just any bourbon, mind you, but a friendly serving of Kentucky Owl Confiscated, a sturdy small batch offering that typically retails for around $125 a bottle.

After checking out the fiery red surface of Mars, I took in a decadent four-course meal at the Post Ranch's award-winning Sierra Mar restaurant. A hedonistic procession of salmon-wrapped scallops, star-anise duck consommé, Niman Ranch pork loin and macaroons with marzipan mousse, the dinner was not cheap: $85 a person prix fixe, without wine.

Set on a cliff above the surf, there are floor-to-ceiling glass walls and the tables are positioned at various heights so there’s truly no bad seat in the house. The staff is super nice, attentive, and accommodating to each and every order. My wife and I have severe Gluten, Wheat, Dairy, and Soy allergy and they completely accommodated us through all four courses of our meal with no issues at all. They were able to substitute items as well instead of removing them which made us feel very special and created a super personalized experience.

At the high end, we have the restaurant at Post Ranch Inn called Sierra Mar. With its glass walls, it is perched at cliff’s edge with some amazing ocean views. Every course of the New American prix fixe menu was good; some, like the duck, were great, though serving sizes were always small.
