They also serve dinner, but we much prefer to snag a table inside their palatial dining hall with huge skylights during the day. Republique is widely known as a powerhouse of French pastries, and that's the real reason why you should stand in line for upwards of thirty minutes to eat at this counter service spot.

The largely French-inspired menu at Republique has more than a few surprises on it, like the generous selection of oysters and kanpachi crudo in Thai green curry and peanuts. The high ceilings, walls of windows, and loads of natural light make the atmosphere ideal, as the omnipresent line outside suggests. The grilled octopus salad—made with cabbage, Santa Barbara pistachios, chile, citrus, and lime—is a must.

Which is probably what Charlie Chaplin said when he walked in, looked up from the indoor fountain and into the clock tower of this grand 1920s-era space, and turned it into his studio. It’s soaring, airy and welcoming, and it seems everyone wants to eat here on Sunday. Not for the faint of heart, in the best way.

This is not the place to come if you are on a diet of any kind because the Manzkes are all in on butter, sugar, cream, nuts, carbs, fat, and sauces—and believe us, you wouldn't want them to make butternut squash agnolotti, red-wine braised beef short rib, wild Maine sea scallops with black truffle and roasted hazelnuts, or brussels sprouts carbonara any other way.

For a still-decadent brunch that doesn’t run up a bill equivalent to rent, check out Republique’s multi-course weekend brunch: $32 per person gets you six courses served family style and a generous portion of orange juice, which can be transformed into a mimosa kit for $22 per bottle of prosecco. I had heard about their reputation for baked goods and knew I couldn’t pass up a visit, so I was delighted when I arrived to a cabinet full of tasty looking treats. Being an indecisive person I couldn’t choose just one thing and ended up ordering the waffles + one of their amazing doughnuts in a takeaway bag for later.

Try having brunch at Republique without filling up on baked goods before your eggs have even arrived to your table. It’s a stupid flaw because I’ve realized it’s made me miss out on many good food, events, etc. That said, I knew it would be a crime for this list if I omitted the Almighty Republique. When I visited, I was growing incredibly wary of croissants in general.
