Ting Thai Caravan co-owners, Ting and Ae Tapparat, first sparked up their street stall works more than a decade ago at the Edinburgh Fringe Festival. Nowadays, they offer a crash course in Thai street eats from two locations: one overlooking Potterrow beside the University of Edinburgh and the other near the Usher Hall on Lothian Road—both draw locals and out-of-towners by the tuk-tuk load. After teasing Edinburghers over the course of several Festival seasons with his temporary pop-up Thai street food stall, chef Ting has permanently opened up shop in Bristo Place with his Ting Thai Caravan.
