Wild game and poultry, line-caught fish, hand-harvested shellfish and foraged mushrooms, berries and seaweed are at the heart of three- to five-course menus (meat, fish or vegetarian) at Wilde Zwijnen (“Wild Boar”). Tables made from recycled timber overlook the open kitchen in the pared-back interior with painted beams and polished-concrete floors, with more out on the pavement terrace on Oost’s vibrant Javastraat.

The list has been growing slowly over time and today features Amsterdam’s top six restaurants: Balthazar’s Keuken, Blauw aan de Wal, Madelief, Marius, Wilde Zwijnen and De Witte Uyl – in alphabetical order. They share a modern French or International menu, the use of purely organic ingredients and an incredible drive and passion for food. There’s another restaurant you can include in the list of providing the most delicious food in Amsterdam which is Wilde Zwijnen. The restaurant is famous for providing tasty Surinamese, Turkish, and Moroccan dishes which makes your mouth filled with water even by the smell. In addition, the eatery has several interesting characteristics that set it apart from other eateries, such as the fact that the head chef has a tattoo of a wild boar (Wilde Zwijnen) on his forearm, and, most importantly, the restaurant makes use of regional ingredients while preparing their mouthwatering dishes.

Out in far Oost, in the up-and-coming Indische Buurt neighborhood, Wilde Zwijnen (Javaplein 23) takes a walk on the wild side with its hearty yet refined food in a setting that combines raw industrial elements and recycled finds with sleek modern features. Quirky details include a wall made of building materials from the site’s renovation, old stable doors for tables, and a concrete floor. Their menu usually features at least some pork, which is not surprising considering that the restaurant's name translates as "wild boars" and great for lovers of game meats.

Frenk van Dinther lived in the neighborhood for a decade before deeming it ready for his innovative cooking, which centers on Italo-Dutch hybrids, such as sauerkraut-stuffed ravioli and baked sea bass with octopus (pictured), along with plenty of verboten groenten ("forgotten vegetables"), like heirloom carrots and purple kale. Meaty mains often feature game, like deer and wild boar (a.k.a. wilde zwijnen), from the nearby countryside.

In Amsterdam Oost, on the recently renovated Javaplein, you will find the restaurant Wilde Zwijnen. The focus here is on presenting authentic Dutch dishes, using fresh, high-quality seasonal products as much as possible. Delve into a three or four-course menu encompassing a range of creative dishes - herring caviar, tomato granita, duck stew, razor shell clams and asparagus ice cream - showcasing the best of modern Dutch cuisine.

Even though its name is written on a small board next to the entrance, legible only from up-close, the venue is usually fully booked in the evenings. The chefs at Wilde Zwijnen have brought traditional Dutch cuisine back – but in a modern, creative style. All the ingredients used in the kitchen are grown or bred in the Netherlands, but if you’re thinking raw herring and stamppot, think again.
