Locals and visitors alike line up at its more than 1,200 colorful stalls to shop for fruit, vegetables, meat, fish, and confectionery. Hop on a stool at The Central Bar, located in the heart of the throng, and taste award-winning chef Ricard Camarena's casual yet no less tasty take on tapas and bocadillos (sandwiches), while enjoying front-row-seat viewing of the action.

Perched on a spike above the central dome, a great green parrot stares downwards, watching over the antics of the milling humanity thirty metres below. The first of the tales tells of the bird being set in place to symbolize the chattering of the womenfolk in the market, both those behind the 900 stalls (female stallholders being historically predominant over their more quiet male counterparts), and the sharp-eyed housewives prodding, squeezing and haggling over the mounds of produce, always with an eye for a bargain.

Most current Valencian Mercados were built more than half century ago (either replacing old outdated ones or answering needs for new ones in rapidly developing city). Architecturally, they mostly represent Valencian urban modernism heavily influenced by hardship of 60’s (read it – limited financial resources). But among them there are few real gems with much longer and colorful history and marvelous architectural forms like for example Mercado Central, Mercado Colon and to some extend Mercado Redonda.
