In the Pasiegos Valleys we can find Casa El Macho, where you can see where the famous “El Macho” sobaos were born, or the Joselín Sobao Pasiego Museum, where they transfer their passion for what they do to all areas. If you are one of those who love to “get into the flour”, they have sobaos elaboration workshops, if you love to know the why and origin of things, the museum will show you the origin and evolution of sobaos and quesadas. After the activity, your mouth is sure to water and you can stop by their cafeteria and satisfy your hunger.

When news of this delicacy reached local hospitality pioneer Paco Quirós, he became intrigued. Quirós visited Pizza Jardín on multiple occasions, sometimes with the senior kitchen team at Cañadío, his iconic restaurant in the centre of Santander, and began to think of ways to tweak the recipe to put it on his own menu. In 2011 a new tortilla following Paredes’ recipe was finally added to the menu at Cañadío.

This restaurant is located in the city center, just a short walk from the Museum of Prehistory and Archaeology of Cantabria, and has a lot to offer. Whether you’re in the mood for seafood or meat, Cañadío has something for everyone. Like many of the other traditional restaurants in Santander, tapas dishes are available including pinchos, homemade croquettes, and cod fritters.
