Reviews Summary

Diners rave about DSTAgE's unforgettable culinary journey, praising its innovative dishes, impeccable service, and commitment to sustainability. While many find the experience to be a creative masterpiece, some note that certain dishes may not appeal to all palates, and the lengthy duration of the tasting menus requires ample time.

"An absolutely unforgettable adventure from start to finish. Dstage is a brilliantly orchestrated experience that plays with your perceptions in the most masterful way.

Upon walking in, we were immediately greeted with a very warm and welcoming smile. The service is a big part of the magic here; the staff isn't just friendly, they are passionate, knowledgeable, and the execution throughout the evening was absolutely flawless.

Every single dish that arrived at our table was an innovative work of art, and we had 22 courses. (Without spoiling too much), each bite challenges your senses.

The joy of discovery is a huge part of what makes this place so special. For anyone who appreciates creativity and innovation served by a team that clearly loves what they do, Dstage is an absolute must."

Mathias Fuchs

"No doubt this was a good meal, but it wasn’t special. Our expectations were high, and the food did not deliver. There were a few highlights and standouts, but the overall experience was not what we hoped for. If you like everything fermented though, this place is for you.

We opted for the tasting menu paired with wine (18 courses I think) and were immediately being upsold to the next bigger menu option. This was not appreciated, although I understand the reasoning. It should have been softer and more sophisticated, not immediately giving a customer the impression they are not spending enough before they have even had their first sip of water - let alone wine.

Food. It kept coming and standouts were the fish, beef steak, and caviar. The ‘Happy Ending’ for us fell flat and was not a good way to finish.

Service. Exemplary. The staff were the best part of the restaurant. Friendly, attentive, non-intrusive but available. After the initial upsell speed bump, they were great.

The restaurant is also smaller than it appears in images, with tables just on one floor and the bathrooms downstairs. It would have been nice to have a drink at the bar, but it did not seem in use all evening. We were not offered an aperitif or digestif there.

Very nice experience but not mind blowing. Unfortunately (for us) the issue was the menu. It will suit some, not others. Do your research before you book to make sure it is for you!"

"DSTAgE – Sustainability and pure product focus at Two-Star Level

With two Michelin stars and an additional Green Star for sustainability, DSTAgE is one of Madrid’s most compelling fine dining destinations. Rarely have we experienced such an uncompromising focus on product quality in a restaurant. The menu engages all senses, highlighting ingredients in their purest form while presenting them with remarkable creativity.

The zero-waste philosophy is embraced wholeheartedly, with often-overlooked ingredients transformed into refined dishes that surprise and delight. This ethos is best exemplified in the main course: a simple slice of perfectly cooked steak, elevated to star level by flawless execution and respect for the product itself.

The ambience is fresh and modern, perfectly reflecting the restaurant’s overall concept. The open kitchen, the absence of tablecloths, and the raw brick walls create an atmosphere that is both contemporary and authentic – an environment that matches the unpretentious yet highly sophisticated style of cooking.

A special highlight lies in the use of advanced culinary techniques: fermentation, enzymatic processes, maturation, and distillation often added unexpected layers of flavor and depth, giving many dishes a distinctive wow-effect and a sense of discovery.

Every dish we tasted was both delicious and memorable. The service matched the culinary standard – knowledgeable, attentive, and eager to share insights into the ingredients and techniques used. The result was not only an outstanding meal but also an educational journey into flavors, craftsmanship, and sustainability.

Conclusion: DSTAgE is far more than just a restaurant – it is a true experience and, as the Michelin Guide states, absolutely “worth a detour.”"

A Guide To The Michelin Starred Restaurants In Madrid

DSTAgE has just recently earned its Michelin star, but it has rapidly grown to become one of the best Michelin starred restaurants in Madrid. Its bizarre-looking name is actually an acronym for Days to Smell Taste Amaze Grow and Enjoy. The chef comes from the Basque country in the north of Spain, and his restaurant, situated in the trendy Chueca neighborhood, serves two different degustation menus: DTASTE, made up of 10 dishes and DSTAgE, composed of 13.

Top 19 Fine Dining in Madrid[2024]

Madrid Dstage, although it is a Michelin two-star, feels completely Samsung level, looking back at TripAdvisor to know that it is the first restaurant in Madrid; I chose twelve dishes, amuse-bouche is a ink fish ball, it looks like a cold dish, and I only know that it is a hot popping ink when I take it up and send it to the import. Tiger milk shrimp raw, a dish full of experience, the chef will explain the whole dish to you in open kitchen, the ingredients, and the Spanish fruit wine is naturally my second favorite dish 😄 The third favorite dish is seafood mousse juice with ghost claw snails. The ghost claw snails had eaten ripe in London before, and the fresh and strong seawater smell of this half-life was unforgettable; the fourth was smoked and cattle, about five mature and cattle in the box with charcoal incense and sliced and purple sour sauce on the saucer; The fifth favorite organic vegetable peanut butter roasted avocado; the window of the bathroom is full of plants, and the servo is also very skilled. If you come to Madrid again, it must be because you want to come to this restaurant again.
