Pigs’ trotters might be a little overwhelming for sensitive diners, as you’re sometimes expected to grip the clammy trotter in both hands and gnaw on it in a somewhat rustic fashion. It’s well worth getting stuck in to the experience however, particularly if you find yourself in Bilbao’s El Huevo Frito, renowned for its Biscay-style trotters, manitas de ministro con salsa bizkaína.

With an interesting name, the fried egg, this bar is located in Indautxu, a central Bilbao district. The quail eggs are the most popular pintxo here, hence the name of the place. El Huevo Frito or the fried egg focuses heavily on, you guessed it, egg-centric pintxos. You’ll find cured meats topped with fried eggs, Spanish omelettes, cooked meats topped with fried eggs, and a few sandwiches without eggs (but mostly bread, meat, and eggs). It’s a fun concept and not just for show.

We considered going in, but we prefer our culture served on plates and in glasses, so we headed to El Huevo Frito for a couple of beers and a tortilla. It was 12pm and this was the beginning of the rest of our day in Bilbao. Bar hopping for pintxos and drinks.
