Health-conscious eaters who follow the slow food movement will be happy to know that this restaurant serves fresh dishes that use locally sourced ingredients, with marinades, sauces, and bread made entirely from scratch. But even those who just want to taste good food will find them at Nonie’s, a Filipino fusion restaurant located at Station X in Hue Hotels and Resorts. They have starters that include salads and sticky pork ribs, while their food bowls, such as their Adlai munggo bowl, provide a filling and complete meal.

Following its motto, Nonie’s believes that “everyone has the right to good, clean, and fair food” and advocates the slow food movement. By ensuring that all ingredients are fresh, locally sourced, natural or organic, it claims to create its own sauces and marinades from scratch and serves freshly baked breads. For appetizers, we had the sticky pork ribs (P360), marinated in pineapple juice, slow-cooked in spices, topped with spring onions and sesame seeds, and served with mango salad on the side.

Nonie’s started as a passion project of Patrick and Shria Florencio, newly married couple who met in Singapore and who both with corporate HR and Technology backgrounds. Nonie’s stands for everything they believe food should and can be, delicious, healthy and most of all, sustainable. This is achieved by highlighting locally-sourced produce and ingredients in a Filipino- inspired menu.

At nonie’s, we are believers in the slow food movement and the philosophy that everyone has the right to good, clean and fair food. This is what we aim to achieve through bringing our processing in house, baking our bread daily, making all our sauces and marinades from scratch, and using only the freshest ingredients possible.

I had breakfast at Nonnie’s – the final stop on my tour of Boracay by breakfast. Gawd they had a good menu in there. I was ravenous so went for beef brisket eggs benedict with an aero press coffee.

Patrick Florencio and his wife Shria decided to move to Boracay in 2016 from Singapore. They were both executive recruiters before the huge shift. Nonie’s started to operate on February 14, 2017.
