"Dining at Statholdergaarden on February 26 was a beautiful and thoughtful journey through Nordic flavors, presented with elegance and precision. I had the full tasting menu, which unfolded over the course of about two hours — a perfectly paced experience that never felt rushed.
The house bread was simply outstanding — made with a sourdough starter they’ve been feeding for seven years! The first amuse-bouche looked stunning, though the flavor was more subtle. The morel course had layers of earthy complexity — maybe a bit too complex for my taste, but still interesting. The winter cod was a highlight: perfectly cooked, with a sauce that reminded me of ginger and orange — bright and deeply flavorful. A small extra sorbet followed as a refreshing intermezzo.
