The eatery’s mastermind is Julio Castilón, a 28-year-old lawyer-turned-chef who put in time at La Palapa. At Gaby’s, he dishes up staples like fresh guacamole and ceviche, and also more unique specialties like chile en nogada (a poblano pepper stuffed with ground meat and topped with an almond sauce).

Then we treked off to the charming family owned restaurant Mole Rosa.Specializing in various moles, Chef Gunther treated to a sampling of chicken enchiladas covered in three varieties. This is one of the most beautiful plates of food I have ever been presented with. The “mole rojo” sauce on the left is made from a Guajillo and Ancho chiles, garlic and it is finished with a tiny bit of mexican chocolate.

Gaby’s doesn’t have a vegan menu, but because of their knowledgeable staff and killer (and we mean killer) view of the Bay of Banderas from its upstairs terrace, it’s on our list. Order up some racilla (moonshine made in the mountains surrounding the city) and then tweak the enchilada, chimichanga or a spaghetti and enjoy.
