The quality of the food is outstanding, with authentic local flavors that truly impressed us.

At around $10 per dish, it’s also very affordable. The waitresses were also very friendly and attentive.

One thing to note is that you can only pay with cash, but there’s an ATM conveniently located right across the street, so this isn’t a problem.

Overall, this restaurant should have a rating of at least 4.5/5. If you’re looking for authentic Oaxacan food with great service, this spot is a must-try!"

"My meal was delicious and healthy. I got a glass of the orange water and a corral burrito, which came with a beautiful and fresh side salad.
The main dining room has big doors that open onto the street, so there’s a lot of natural light and people watching.

This place only takes cash, as you’ll see from the various signs on the walls and on the menu."

My second time here in 2024, last time I had the pozole and this time my wife and I shared the bartered shrimp tacos and black mole enmolada with plantain, and everything was 10/10. The agua tamarindo was also really good. The batter on the shrimp was light and tasty, not greasy. The black mole was decadent. The thinner tortillas here add an elevated feel to an authentic local experience."

With a mixed menu full of loving interpretations of classic Mexican street food and market favorites, Cabuche is worth coming to for the vegetarian pozole (hominy soup) alone. A hearty, spicy soup usually made with chicken or pork, Cabuche uses mushrooms and a variety of vegetables to make its rojo (red), blanco (white) and verde (green) varieties of pozole. The potato, poblano pepper and huitlacoche guisados (stews) are also superb, and even better washed down with its homemade craft beer.

That second trip I returned to Cabuche, a small spot that looks more like somebody’s living room than a restaurant, and asked the chef how he got his red posole broth so full of chile flavor—yet with close to zero heat. I paid a visit to Enrique Olvera’s newest outpost, Criollo, to find out how it was possible to make such a distinctive mole, all from relatively common ingredients. And then I took my smuggled chiles and scribbled notes back to my small Brooklyn apartment and tried my hand at re-creating the things I had eaten.

We tend to view Cabuche as an opportunity to get elevated street food in comfort, intended as a compliment. The shrimp taco was overfilled, a good problem to have to handle, and an abundance of quesillo cheese and rajas de chile were piled onto a tostada. The cazon (dogfish) tostada, unusual for the region, reminded me of the fish featured frequently on menus in Campeche.
