Reviews Summary

Pujol is celebrated for its innovative Mexican cuisine and elegant ambiance, with many highlighting the unforgettable mole madre and attentive service. However, some diners find the price point high for the overall experience, and a few have noted issues with pacing and the beverage pairings not meeting expectations. Despite some criticisms, it remains a highly sought-after dining destination in Mexico City.

"🌟 An unforgettable dining experience! The menu was outstanding—every dish was a hit! I especially loved the mole madre and the chocolate tamale paired with cajeta ice cream—absolutely divine. The tortillas were fresh and full of flavor. Service was warm and attentive, and the restaurant itself has such a charming, cozy vibe. Highly recommend!"

Yanelly L

"This was a tough one. The food was better than a 2 for sure, it wasn’t a 4. The pairing was the real issue. I paid more than I did at a similar restaurant the day before for a beautifully paired 9 course meal. They do not offer a wine pairing. The pairing flavors were correct and interesting, but pairing a course with a beer was a little much. There should be options for a wine pairing and you should know what the pairing entails. Nowhere did they tell you what would go with the meal. The atmosphere was a bit loud and we were sat by the kitchen with a view of the bathroom. We couldn’t hear the wait staff as they explained the courses. We expected more. It wasn’t a bad experience, just not what we had in mind when we booked. My wife had been wanting to eat here for several years, and we literally planned a trip around this reservation."

Tony Russo

"I have been wanting to go to Pujol for a really long time and mostly it was a sensational experience. It was good. But not great. We arrived at 9:15pm for a 9:30pm sitting, and they did have our table ready which was awesome. But the first food did not arrive until 10:10pm. The food service was really slow, especially at the beginning. We also did not get any drinks until 10pm, so that first 45 mins of sitting without service felt slow.

After that, the food came out at a reasonable pace.

Many top end restaurants we’ve been to have a glossary to make sense of the unusual ingredients and also gives you something to read when waiting. Unfortunately this wasn’t available and instead we found ourselves Googling the whole time for more info. The wait staff did do a reasonable job of explaining but the piano is way too loud to hear them and we needed to keep asking them to speak up.

Food portions are uncomfortably large. 3 of the dishes are served with tortilla to make tacos. Desserts are all a miss.

We orders the matched wines, and the matched Mexican drinks. Both had some standouts and a lot of misses."

2 Days in Mexico City

Get dressed up for an evening in the city’s most well-heeled zone, Polanco, where Pujol, the Two Michelin Star landmark, opened its doors in 2000. Chef-owner Enrique Olvera is recognized for forging a fine dining movement out of his country’s cooking, turning staple dishes like mole, into, as Michelin Inspectors write, “an effort like no other that celebrates Mexican history and cuisine in the most profound way.” Olvera’s origins in the industry as a teenage dinner party host shine through in the welcoming dining room built from a mid-century home with a lush wraparound courtyard. “Tradition and invention go hand-in-hand” on the seasonal tasting menu, which leans lighter with plates like grilled Baja coast rockfish with butternut squash puree and sherry foam.

His relocated Pujol is airier, brighter and a little greener than the original; service remains slick and staff informative. The menu is famous for its moles (pronounced 'mo-lay' and meaning sauces) – notably the 5-year-old (and counting) mole madre or 'mother sauce' – you can feed a mole much as you might a sourdough starter. The seven-course taster is heavily fish-focused, featuring ceviche, sea bass and spiny lobster, all zinged up by Mexican sauces, chillis and innovative elements such as habanero ink, salt made from toasted maguey worms and a juiced white corn that goes by the evocative Nahuatl name of cacahuatzintle.

PUJOL– Apparently everyone has seen Netflix’s series Chef’s Table with Pujol’s Chef Enrique Olvera (he also now owns Cosme and Atla in NYC) except for me. I usually have a hard time enjoying myself at a restaurant that is SO hyped up, and in this case named #20 on The Worlds Best Restaurant list and #4 in ALL OF LATIN AMERICA. However, this time I soared off the plane right into one of the most beautiful restaurants with a perfect window table with perfectly positioned Instagram lighting at our seating arrangement (they renovated and moved to a new location a few months ago). Inside the restaurant is sleek, the neutral color palate makes you feel like you are in a modern museum that’s having a trendy party due to the uplifting, back lighting on the bar.

At the 2015 Latin America’s 50 Best Restaurant Awards, hosted in the city after two consecutive years in Lima, Peru, Quintonil nabbed Pujol’s crown as the top Mexican restaurant on the list. Both prepare elevated versions of traditional Mexican food like intense mole sauce (Pujol claims it’s mother sauce is more than two years old), tostadas, grilled meats and soups infused with traditional ingredients likes escamoles, chapulines, amaranth, maize, mamey and soursop. At Pujol, nothing is as it seems, at first– the chapulines are slivered and tucked into a salsa within an inflated tortilla encasing a molten poached egg, ants are powdered with baby corn, the amber mole sauce is silkier than any of the diner and home versions I’ve had.

So I was excited for my first experience at Pujol, number 13 on the 2018 list of the World’s 50 Best restaurants, the place where it all began for Olvera. (Actually, the original Pujol began in another location, not far from the current, beautiful, clubby restaurant in city’s tony Polanco neighborhood.) The restaurants are quite different from each other, Pujol fancier and more refined—you might say more "grown up"—than Cosme, offering an elegant tasting menu that draws on old and new ingredients and techniques. The famous Mole Madre, aged more than 1500 days and served with a new mole to contrast and brighten the funky flavor of the mother, is unique and beguiling.
