"The food was a mixed experience. Much of the food was uneven temperatures, like part of my appetizer of the chilles was cold cheese on the inside of a fried pepper. Our mole was a mixed experience as well. We got the tricolor. The dark mole was very flavorful though a bit sweet. The lighter one was nice and toasty. The poblano was a disappointment with very little flavor and bad texture. Again some were cold, even the chicken, and some were the right temperature. It took away from the experience as it didn't feel fresh. Also we saw them bringing in store bought tortillas, and you could tell by the texture they weren't fresh. With so many food options, this place was okay, but maybe not worth trying more than once. I don't recommend it because if the inconsistent freshness and flavors. Good service though and okay ambiance, except for being right on the road and getting a lot of noise."

The menu at Los Huacales, near the Juárez Theatre, is twenty-four karat Mexican. It features dishes like tricolor enchiladas served with three kinds of mole sauce and tacos filled with chicken tinga – a stew made from tomatoes, chipotle and cane sugar. The restaurant itself is whitewashed, but shelves of wooden toys and potted cacti add hints of Mexican color.

So, armed with a complimentary bowl of warm homemade tortilla chips and a selection of dips, I scour the extensive menu for something that’s going to satisfy my raging hunger and obsessive desire for lots of spice.

Based on ratings alone, Los Huacalaes has to be one of the best restaurants in Guanajuato. It’s a traditional Mexican restaurant that serves good food in a relaxed, casual space. I was here for the enchiladas mineras, which our server was quick to describe as an “excellent choice”, but they do offer an extensive menu of traditional Mexican dishes like molcajete, milanesa, chile relleno, and enfrijoladas.

Los Huacales is that tiny restaurant (a hit with both visitors and locals) that does a decent job of it and I recommend this place for dinner. I could not make it to Enchiladas de Lupe which I believe is another local favorite for this dish.
