È eclettica la scommessa azzeccata da Panzerotto, il “fast-fudde ternano” dove i panini sono farciti con padellaccia, coratella e fegato; ed è diametralmente visionaria la pizza di Armando Beneduce di Nascostoposto, artefice di quell’osmosi umbro-partenopea che si condensa nella pizza alla carbonara con barbazza (il guanciale), uovo e fiordilatte campano.
