"It was a Sunday, my last day in Rome, all the restaurants were full at lunch. I was alone. I tried two other restaurants, no go. I walked in and the host said, “we are full”. I put my puppy eyes on said,” all I want is a salad and pasta”. It was 1:00pm, “can you be done by 2:00?”. “100%”. I had the best puntarelle salad of my trip, full of anchovies and not drenched in oil and vinegar like the others I have had. It was a so refreshing. For the pasta, Cacio e Pepe, so many I have had, had sauces that are stiff and only a step above macaroni and cheese. This serving was creamy, cheese and water, it is a miracle. The pecorino shined through with balancing pepper. Fantastico!!! I finished by 1:45pm, thank you for letting me in…"

Lo spaghettone alla carbonara parte dalla pasta Cocco che viene lessata al dente e mantecata in padella con il grasso del guanciale e poca acqua.
