The pizza crust was sublime... the owner told me that the dough undergoes a 72-hour fermentation, which imparts so much complex flavor. The crust was thin and crispy on the outside with large air bubbles and a soft and tender crumb on the inside. The toppings were imaginative and delicious. Better than any pizza I have ever tasted in New York City, Chicago, Boston, Los Angeles, or Rome. Everyone in our family agreed that this pizza was phenomenal."
