What Travellers Say
Reviews Summary
Trattoria Sostanza is lauded for its authentic Tuscan flavors and historic ambiance, with many praising the legendary butter chicken and perfectly cooked Florentine steak. However, some diners find the prices high for the portion sizes, and a few reviews mention a less-than-ideal dining experience regarding flavor and hygiene. Despite mixed opinions on value, the unique, old-school charm and signature dishes keep drawing both locals and tourists back.
"Simply excellent. I could not have been happier with my lunch at Sostanza! Even if at first I had to convince my partner that the "boring looking" chicken is worth trying, he was shortly proven why this dish is loved by everyone. The recipe is perfect. Their meringue dessert with fresh fruit is also a great option as it fulfills the sweet craving whilst still being light and fresh."

"We loved this place so much we went twice during our trip. The first time we went right when they opened for lunch without a reservation and we were lucky
enough to be seated. After that meal, we made a reservation for dinner for a few days later. The butter chicken was by far the best chicken I have ever had in my life. We also had the tortellini in a butter sage sauce and it was divine. This is a Michelin star meal in my eyes. The meringue dessert with the wild strawberries is something i’ll be thinking about long after my trip is over. The service was wonderful and I imagine we will come back anytime we are in florence. Make sure you make a reservation if you want to come here!"

"There’s not much to say — it’s simply sublime. By far the best Italian restaurant experience we had during our trip to Italy.
The cooking is simple, BUT! Don’t let simple mislead you — it’s actually the most difficult thing to do well. In most places, they hide low-quality ingredients behind smoke and mirrors, but not here. All the ingredients are top quality.
We’ve been here for one lunch and one dinner, and none of the dishes disappointed. My absolute favourite was the omelette with artichokes and the chicken breast cooked in butter. It might sound silly — I would never normally order chicken breast anywhere — but this dish was marvellous. A tender yet juicy chicken breast, cooked perfectly, is one of the most challenging things to achieve.
The bistecca was fantastic. The green beans and the white beans too — the list could go on and on. To be fair, every little detail was just right.
I rarely say fantastic, but this was it. I’d highly recommend it to everyone. The only downside is that you have to book well in advance.
Otherwise… if you’re in Florence, don’t miss it."

A reservation is an absolute necessity at this very traditional and very popular Florentine trattoria. The white-tiled walls are hung with photographs and prints; hard wooden benches and tables run along the perimeter, and more tables are squeezed into the center. The menu is decidedly Tuscan with highlights like finocchiona (a fennel-flecked salami), slow-cooked beans, tortino di carciofi (artichoke in swirl of whipped eggs), and butter chicken, which is served sizzling in the pan.

Since opening its doors in 1869, this trattoria has been serving top-notch, unpretentious food to Florentines who like their bistecca fiorentina very large and very rare. Along with fine Tuscan classics, they have two signature dishes: the tortino di carciofi (artichoke tart) and the pollo al burro (chicken with butter). Leave room for dessert, as their torta alla Meringa (a semi-frozen dessert flecked with chocolate and topped with meringue) is scrumptious.
