Reviews Summary

Mo Mortadella Lab is a highly-rated spot in Bologna, celebrated for its exceptionally delicious and generously filled mortadella sandwiches. Diners rave about the unique flavor combinations and the quality of ingredients, often calling it a highlight of their trip. While portions are large and service is quick, be prepared for potential lines and a lack of seating.

"A small place between the streets but the food is amazing. It doesn't matter if you prefer fine-dining or street-food, this is a must try!

Bread is special and crispy. We had one with Mortadella, Buffalo and Olive oil and loved the taste. We ordered 2 but the portions are big and it is also possible to share one.

Employees are fast and friendly. They speak also English.

Thank you for the great food!"

"- Quick and premier service (they had a guy organizing the line and an assembly of guys making the food. Just perfectly done
- I tried an 18, which seems to be one of the most popular. Amazing. I really don’t think you an go wrong here. And the prices are incredible at only about 6-7 euro per sandwich. You cannot beat this!"

BWS Travel

"Disclaimer: I’m a vegetarian, so I realize I’m not their main target audience. That said, they do offer two vegetarian options (thank you!). I tried the #23, which was good but not great—mostly bread with a lighter amount of filling than I’d hoped. Also was not particularly blown away by the flavor combos. Luckily, the bread itself was tasty and well made. If you’re vegetarian, it’s nice to know there are options here, and they may be worth a try. Personally, it just wasn’t my favorite in Italy (that still goes to a spot in Florence)."

Delicious Top 6 What to Eat in Bologna: Bologna Food Guide

Also known as “La Bologna” (funnily enough, not in Bologna but everywhere else in Italy), mortadella is a sausage made of pure pork, pink in color with a typical aroma, usually served sliced with other cold cuts or in cubes. Mortadella is so precious that there is an organization dedicated to its protection, and to ensure its quality, look for the one with IGP certification (Protected Geographical Indication). In the memories of children, there’s the mortadella sandwich prepared by grandma or mom, and that’s how we propose you to taste it.

A Foodie's Guide to What to Eat in Bologna, Italy

The most famous of the meats in Bologna, mortadella is a cured pork sausage that is injected with fat and often pistachio, as well. This simple delicacy can be enjoyed a number of ways: on its own, with crescentina fritta (a local fried bread), in a tigelle (a small sandwich, similar to an English muffin), or in a sandwich. All ways are delicious and will make you reconsider why we ever agreed to eat “baloney” in the US instead of these far superior cured meats.

Bologna Food: 9 Things You've Never Heard Of

Mortadella is a large fragrant Italian salami made from finely ground pork meat with 15% chunks of white pork fat. It is typically seasoned with salt, pepper, pistachios and sugar, blended so the meat absorbs their flavours. The name ‘Mortadella’ comes from the diminuitive of ‘myrtle’ a plant with berries once thought to be used as seasoning – the latin being ‘murtatum’ and Italian, ‘mirto’.
