Reviews Summary
Ishtabach offers a unique taste of Kurdish-Syrian cuisine, with many praising the signature shamburak pastries, especially the brisket and tongue fillings, as well as the well-seasoned starters. However, some diners find the pastries can be dry, and the atmosphere can be loud and crowded, with service occasionally being slow. Despite these points, the authentic flavors and market ambiance make it a popular spot for many.
"Brisket was amazing. Syrian kebab ground beef was good but not as epic. The sauces and condiments we got on the side were fantastic. Could not decide on which beer and the server brought some to taste.
Ambiance is casual. It’s crowded and loud. There’s room to sit at the bar and watch the baking of the pies. Also seating outside."

"The food here was pretty good but didn’t wow us. The taste was there but the pastries and fillings were quite dry. I pretty much soaked it in tahini to make up for the dryness. Also, we split 4 pastries, 3 beef and one chicken. The three beef ones tasted nearly the same, we couldn’t tell a difference between two of them, and the third one (the brisket) was definitely the best. We also have the chicken, which was pretty dry, but that’s expected as they are using chicken breasts. The starters were really good. We got the salad, which was well seasoned/dressed and had a variety of toppings that added to the dish and we got the potatoes, which reminded me of a better version of patatas bravas from Barcelona. They were well seasoned and came with two delicious sauces that rounded out the dish. Overall it was the restaurant was really good. There are many options around and this is probably one of the better ones in the area. I recommend."

"Tasty, unique and authentic food.
Service is ok: waitress was almost whispering, and it's a loud place...
The atmosphere is cool, but chairs could be improved.
Overalls, nice value for money."

At nearby Ishtabach, which took over spaces formerly occupied by a vegetable storage warehouse and an adjacent barbershop, ample bar seating and talkative cooks mean you’re bound to strike up conversation and swap stories. Even the main dish, called shamburak (a pastry filled with meat and potatoes and baked inside a large domed oven), comes with its own tale. Almost everyone who works at Ishtabach will tell you about how these pastries were inspired by owner Oren Sasson-Levy’s Kurdish grandmother, who would stuff the remaining Sabbath stew into dough and bake it, creating a fresh meal out of her leftovers each week.
Authentic Jerusalem restaurants for Middle Eastern street food
This restaurant in the alleys of Machane Yehuda Market rose to fame because of its shamborek, a fluffy Kurdish-Syrian pastry with hearty fillings: Syrian kebab, chicken satay, tongue or a vegetable-stuffed vegan version. This is not the only thing that makes this spot so busy; everything is cooked in-house, including the roasted meat soup, brisket, shakshuka and more. The clay oven known as the tabun seals the deal, making everything that comes out of it excellent.
