In 1994, the Michelin Guide awarded for the first time a star in the new federal states. He went to the Dresden Mario Pattis, who then and now convinced with a kitchen that is characterized by a playful combination of traditional and classic elements. Adoring saxony court’s culinary creations. As a young chef, Mario Pattis rummaged through various libraries to learn more about the metropolis's former food culture. Today, he serves contemporary interpretations of what once belonged to regional haute cuisine. In addition, he skillfully integrates avant-garde techniques into classic culinary art.
Mario Pattis is graduated from the refectory of the Technical University in Dresden he completed his education. Very early and even before the turnaround, he tried hard to cook, but in the GDR ( old german ?) Demand was low and interest in refined dishes barely existed. Mario wished he could do his apprenticeship in the West and spent his wandering years in the starred restaurants he admired from afar. So he had only the initiative - and after the turn the opportunity to use his vacation for training in the now accessible for him top restaurants beyond the former Iron Curtain ( soviet , now partly russia) .
What Mario Pattis can do today is therefore largely self-taught. He was also strongly influenced by the affiliation to the Jeunes Restaurateurs, to whose executive committee team he belongs today. The intensive exchange of experiences among these young colleagues has contributed much to its development.
For many years, Mario led the kitchen of a Dresden Romantik Hotel, but since 2009, he realizes his own plans. In any case, regionality will remain a big topic and we can look forward to seeing what Dresdner will offer us in the coming years."
