The pioneer of third-wave coffee culture in Toulouse, La Fiancée is now one of many beloved coffee shops where we can find flat whites and other specialty coffees to quench our cravings. Now having expanded to two branches, the larger boasting a beautiful terrace nestled in the shade of the looming Saint-Sernin basilica, La Fiancée didn’t let their first cupboard-sized premises slow them down, as they became known as the original specialty coffee shop in Toulouse, opening as far back as 2012. According to the owner, La Fiancée was the only coffee shop on the block because “the French don’t care about good coffee!

Serving coffee and brunch for over five years, La Fiancée on Rue Peyrolières seems to be Toulouse’s original specialiy coffee shop. At first glance, the café seems tiny with only a couple of small tables in front of the coffee bar, but there’s more space in the lofted mezzanine. The coffee comes from Paris-based Coutume, one of my favourite coffee spots in the French capital, and there were two single-origin varieties available as a V60 pourover.

We start our favorite day in Toulouse with a breakfast in the Café La Fiancée near the Garonne, the river passing the city. There you get not only the best Café au lait but also the most delicious cookies on Earth (homemade with a dose of love). If you are on tour with a stroller, you should go to Place St. Georges (where there is also a playground for children) and have a breakfast à la franchaise at Café Au Jardin des Thes.

On y retrouve tous les classiques et spécialités que nos amis anglo-saxons aiment tant déguster : des pancakes salés, sucrés ou nature, les fameux "eggs on toast" (au levain s’il vous plaît)… Niveau boisson, on ne peut que vous recommander d’essayer le chaï latte fait maison !. Ce coffee shop est spécialisé dans toutes les extractions de café et dans la comfort food : expresso bien calibré, cappuccino… Tous les cafés sont de Coutume (Paris). À cela s’ajoutent orangeades et citronnades maison qui accompagnent pancakes, breakfast sandwiches, œufs en tout genre. Mini burgers au brie et à l’huile de truffe, cakes à la rose, œuf poché sont à retrouver régulièrement au menu.

L’adresse tendanceOptez pour l’une des deux adresses, l’une près de la basilique Saint-Sernin ou près du couvent des Jacobins, avec brunch aux produits frais servi chaque matin jusqu’à la fin du déjeuner. This charming bistro is a fabulous gem for Sunday brunch in central Toulouse. Finding parking can be tricky, so I’d suggest walking from spots like Esquirol or Capitole metro stations (around 10 minutes away). The staff here are true professionals – so friendly, helpful and cheerful, keeping countless happy diners smiling from open to close.

Close to the Quartier de la Daurade is Café La Fiancée, which was opened in 2012 by longtime friends Olivier Coulomb and Arnaud Pimenta. The two owners shared the same goal of elevating Toulouse’s specialty coffee scene. There is also a second location in Marseille, which opened in 2018.

When googling for Toulousain specialty coffee shops the few reliable sources only gave me one find: La Fiancée. The specialty coffee scene in Toulouse started in 2012 but hasn’t picked up much speed since then. Bit by bit, new spots open, waiting to be discovered.
