🌱 This week at @kojicopenhagen, we had the privilege of collaborating with the renowned @jatakcph! Together, we repurposed their food waste to create a unique Chanterelle Miso and a Tomato Shoyu. These innovative ferments are now in the works, allowing the koji to work its magic over the next few months. We’re excited to see these umami-rich products find a place on future menus. Reviews Summary

JATAK garners praise for its innovative Nordic-Asian fusion cuisine and intimate kitchen counter experience, earning a Michelin star shortly after opening. Diners rave about the creative dishes, locally sourced ingredients, and attentive service. However, some find the pricing to be on the higher side, and a few reviews mention an unevenness in dish quality or a mismatch between cost and expectation.

"Hands down my new favourite restaurant!

I don’t even know where to begin with this menu — it went beyond every expectation I had!

Every note of praise is heavily deserved for this kitchen, staff and restaurant.

Cannot wait to try another one of their menus one day!"

Inger Margrete Hansen

"This was just outrageously good. Though the flavours were totally unique, it really felt like eating at a Cantonese restaurant, where everything was delicate and showcased the ingredients used in a really considered way. A highlight was the rabbit dish, which involved an immense amount of labour but the outcome was a deceptively simple dish that delivered on all the best parts of eating a rabbit and none of the bad. The hindsholm pork broth + char siu, Norwegian scallop and Fjord shrimp were also highlights among a meal that really didn’t miss on any dish. Not to mention that the service was super personable, engaged and worked hard to enhance our time there. This was easily a top 3 meal we’ve had in Europe and I wouldn’t hesitate to come back, knowing that their seasonal approach would probably deliver an exceptional but entirely different experience next time."

Callum Lane

"I had an absolutely lovely dinner at Jatak. It only loses a star for being overpriced for sure, especially compared to my dinner the following night at Høst. Don’t be confused, it was a great meal and my seat at the counter was fascinating.

If you are looking for a fine dining experience in Copenhagen that has some availability, check this place out!

I got duped into ordering the juice pairing, which was actually pretty good. I was there for the Solar Menu and my favorite course was probably the Wagyu heart. Although the surprise Madeline’s that finished the meal were delicious as well!

Thank you for a lovely evening"

From the minute it opened in early 2022 (complete with ringing endorsement from René Redzepi), it’s been one of the hottest tables in the Danish capital, and earned itself a Michelin star within a matter of months. Chef Jonathan Tam takes top quality, seasonal Danish ingredients and puts an intriguing Cantonese/Japanese spin on them, with each course on the ever-changing tasting menu showcasing one main element. Plating is simple but flavours are intense, from umami-rich mushroom broth or shoyu-brushed raw scallops to the egg-custard tart, which shot to instant fame when Redzepi posted an Instagram video of his super-wobbly slice.

Wonderful Copenhagen

Copenhagen's new Asian wave

Previous chef de partie for 3 years at noma and head chef for 6 years at Relæ, Canadian-born Jonathan Tam decided to combine Asian flavours with Nordic cuisine at his Michelin-starred restaurant JATAK in Nørrebro. Nearly trying to hide in the busy neighbourhood of Nørrebro behind curtains and no signs, just a candle outside, the restaurant serves food inspired by the Cantonese and Vietnamese flavours he grew up with. Here Tam combines them with Nordic techniques and seasonally local produce, accompanying the food with natural wine - a must in Copenhagen - and fermented kombucha for the non-alcoholic pairing.

A key player in that movement is Jatak (Danish for “yes, please”), a pan-Asian tasting menu from Jonathan Tam, a former sous-chef at Relæ (oh, look, yet another Puglisi connection).
