Reviews Summary

El Chato is widely praised for its innovative Colombian cuisine and exceptional tasting menus, including a noteworthy vegetarian option. Diners love the creative dishes, unique flavors, and the intimate, hip atmosphere. However, some guests have experienced inconsistencies in service and found the a la carte dishes to be occasionally unbalanced, with one reviewer noting a strictness issue with dietary restrictions.

"El Chato is dining on a different level. Its frequent ranking as one of the best restaurants in the world is well-deserved. I cannot recommend it highly enough, this is a must-go if you’re into fine dining and are visiting Bogota.

We opted for the tasting menu, which is served in two shifts every night. The tasting menu guests are seated on the second floor, while the a la carte restaurant is on the first floor. The design of the second floor lovely, with half of the space taken up by the open, stainless steel kitchen, and the other half taken up by the guest area, with about 6 tables. The atmosphere is intimate, and though the floor is bustling with activity from kitchen staff and servers, it doesn’t feel too busy.

The 12-course tasting menu was one of the best we’ve ever had. El Chato uses almost exclusively Colombian products, and uncommon products as that (two particularly interesting dishes were the beef heart tacos and the chocolate mousse dessert with powder from coca leaves). The flavors are novel, beautifully balanced, and there isn’t a dull moment in the menu. It’s some of the best food we’ve ever had, getting close our favorite restaurant ever, De Librije. We both had the non-alcoholic pairing, which rivals some of the best pairings in Europe: homemade teas, kombuchas, cocktails, generally fitting the dishes very well. The staff were friendly enough to give us refills on some of our favorites!

What’s not advertised enough by El Chato is their vegetarian tasting menu. It is put together with at least as much thought as the regular tasting menu, and is truly exceptional. Beautiful flavors, novel dishes, and incredible ingredients. Again, it’s one of the best vegetarian tasting menus we’ve ever had (topped only by Encanto in Lisbon).

The service was excellent as well. Our server and the sommelier were super friendly, knowledgeable, professional yet not distant, and just lovely to interact with. The same goes for the chef and other kitchen staff we interacted with.

El Chato is perfection. It produces some of the best food in the world. An absolute gem. My only recommendation to them would be that they start advertising their phenomenal vegetarian tasting menu more."

"Wow…….
I had nearly given up trying to find flavor I loved in Columbia. But this restaurant is one of the reasons I will come back. From the outside at night you would drive right past and not even bat an eye. Your visual senses are overwhelmed as soon as you walk in the door by jars of ingredients and a kitchen on display to see the passion in making the food. The wine pairings are well thought out. All of your senses will be stimulated here. Every dish just gets better than the last. I don’t know how they do it. You would be crazy to not try this place when visiting Columbia. This is one of the best food experiences I’ve had.(Period) Yes they will meet your dietary restrictions. Yes you will enjoy this food. Don’t ask just make reservations."

Logan Hadfield

"El Chato is one of Bogotá’s culinary gems. The cuisine is outstanding, with every dish crafted to highlight fresh ingredients and bold flavors. Their cocktail list is equally impressive, especially their signature cocktail, which truly elevates the dining experience. It’s no surprise that El Chato has earned its place among the 50 Best.

If I had to suggest an improvement, it would be to have a dedicated server for each table to ensure an even smoother service. That said, the team was impeccable in timing and in making us feel genuinely welcomed. I will definitely return if I come back to Bogotá — highly recommended!"

You may be welcomed with chicharron---the much-loved thick-cut fried bacon that's served with dehydrated cilantro, candied lime, and charcoaled chili---which sets the tone for a menu that features both meat-based and vegetarian dishes. Be sure to save space for the delicate and masterfully presented desserts.

Where to eat in Bogotá, Colombia

A former sous chef at Bogotá’s feted contemporary bistro El Chato, Jaime’s first standalone venture is a Colombian take on an izakaya, an informal Japanese tavern serving drinks and snacks — although what I find seems to stretch that definition to its limits. Inside, it’s dark — death-metal dark at times. The walls, booths and waiters’ uniforms are all black, serving as a canvas for an occasional bold splash of colour — from graffiti and bathroom murals backlit by neon.

Alvaro Clavijo is part of the wave of talented young of chefs who have, after spending time working overseas (in his case, Le Bristol and L’Atelier de Joel Robuchon in Paris, Per Se and Atera in New York, and Noma in Copenhagen), come back to home to make magic. El Chato, which was the highest new entry at the 2018 Latin America’s Best Restaurants Awards at No. 21, features seasonal Colombian produce reincarnated into technique-driven plates like the delicate squid and mushroom tartare, the umami-laden crabmeat and squid ink rice chips, and the boundary-pushing Colombian pound cake made with the controversial coca flour, all served at a casual and relaxed space. Tatler tip: The upstairs is a bright and airy lounge peppered with greenery fronting the kitchen where Clavijo and his team are hard at work.

If you’re going to eat at just one restaurant in Bogotá, make it this winner on Calle 65. Here, chef Alvaro Clavijo is creating dishes like sweet crab with squid ink crackers, tender and mild chicken hearts with grated egg yolk, sour cream, and thin sliced native potatoes, and a grilled hearts of palm salad that we could eat every single day made with tender celery leaves, avocado, and a zingy citrus dressing. The dining room is moody and comfortable, the sommelier is passionate, and plate presentation is gorgeous but never gimmicky.
