Reviews Summary

Diners consistently praise Botanist for its elegant atmosphere, exceptional service, and beautifully presented, flavorful dishes. Highlights include innovative cocktails, the tasting menu, and specific dishes like tagliatelle and octopus. While most experiences are outstanding, some minor critiques mention occasional blandness or slight undercooking of certain dishes.

"Beautiful atmosphere and delightful food. We had a fun date night after seeing the Banksy exhibit.
The team was so nice and professional - Avital, our server, was amazing - super friendly, observant, attentive, and very sweet.
When we had a hiccup with one of our dishes, she was able to resolve the problem right away. 💕

We enjoyed the octopus, the tagliatelle (so good!), and the beets. Would recommend!

The lamb was a bit undercooked and needed some adjustments (which was done quickly)! The vegetables accompanying that dish was delicious.

The sable fish was cooked really well… the dish overall was slightly bland.

The cherry blossom drink was delicious.
Croissant bread pudding was ok. :)

Overall, the staff was amazing - the space was beautiful, and the food was good!

Might come back with my kids. I was happy to see some kids there too!"

Eveline Yu

"Had an incredible dining experience at Botanist in Vancouver! From start to finish, everything was exceptional, but the standout dishes were without a doubt the halibut with olive oil and the octopus—both were absolutely delicious.

The halibut was perfectly cooked—tender, flaky, and elevated by the richness of the olive oil. It was simple yet refined, letting the quality of the ingredients shine. The octopus, on the other hand, was incredibly flavorful and perfectly tender with just the right amount of char—easily one of the best I’ve had.

Beyond the food, the atmosphere was elegant yet welcoming, and the service was thoughtful and attentive without being overbearing.

Highly recommend this spot if you're looking for a beautifully curated culinary experience in Vancouver. I’ll definitely be back!"

Mihai Stroe

"Botanist was voted one of the best bars in the North America which means I had to drop by for some food and drinks.

First of all, service is great here, but highly recommended you get a reservation. The interior is beautiful, they spend a lot of time on the aesthetics of the restaurant.

Once inside, you have some wonderful food options that are all carefully created and if you’re interested, you can watch the kitchen work behind you while they assemble everything.

The cocktails really shine here, even at the restaurant level, they are delicious! If you’re feeling more adventurous, get a seat at the bar where you can try $45 cocktails which are a tad expensive in my opinion, but they definitely make a show of it with flames and interesting contraptions.

Overall, come for the food and a few of the regular cocktails, you’ll already have a wonderful time. If you’re really feeling like a good time or want some pictures for the gram, then splurge for the $45 cocktails (only available at the bar)."

The 10 best restaurants in Vancouver

Head upstairs away from the hubbub of the Fairmont Pacific Rim’s Lobby Lounge to the vanilla and pale pink curves and jungle of greenery at the Botanist to find a champagne lounge bubbling over with eclectic offerings, a cocktail bar 'focusing on high-concept creative presentations and chef Hector Laguna’s fine-dining haven celebrating locally sourced produce and sustainable seafood. This may be one of the pricier spots in town, but Laguna’s delicate artistry, confident use of bold flavours and textures which dip into his Mexican heritage, and whisper-light intensely flavoured foams makes their tasting menu worth every penny. House-made pastas are silky and bright, veggies shine as the stars of the plate and dishes dance with decadent cheffy touches such as a wafer-thin, beet-stained crêpe layered in a mille feuille with foie gras, dotted with sustainable local caviar.

Headed by the passionate Chef Hector Laguna, the kitchen takes great pride in sourcing the best local product, whether it's wild, locally caught seafood or produce from the Fraser Valley. Located on the mezzanine floor of the Fairmont Pacific Rim, along the elegant pathway that leads into the restaurant proper, Botanist Bar features an innovative cocktail card thoughtfully divided into the ecological regions that inspire their flavour profiles: Mountain + Meadow; Coastal + Oceanic, Orchard + Field, and Desert + Tropical. The talent behind the bar is on-point, and the experience is top-notch. Drink this: Their most famous (and frequently photographed) drink is the $40 Raincouver Cocktail, a stunning mix of vodka, cherry blossom, yuzu, pine, aperitif wine, fennel pollen, vegan foam, Perrier sparkling, and an edible rain cloud (seriously).

What to know before you go: Botanist prides itself on what it calls “the country’s only forward-facing cocktail lab,” which translates to experimental concoctions using such uncocktail-ish ingredients such as foraged candy cap mushrooms (to infuse Canadian rye), sea asparagus and fennel pollen.
