Diners rave about Bistro Bruut's exceptional and innovative gastronomic experience, highlighting Chef Bruno Timperman's creativity, the unique natural wine pairings, and the warm, personal service. The romantic canal-side setting adds to the charm, making it a memorable culinary destination in Bruges. While the no-choice set menu is part of the experience, some guests note the price point is high, but ultimately consider it well worth the cost for the overall artistry and dedication.
"It was an amazing dining experience in Bruges. I was so lucky that I could make a reservation and it was the best meal during my stay. The dishes were unique and tasty, together with the wine pairing. The staff was very friendly too."

"Food: Excellent! They offer a “surprise” tasting menu (no substitutions allowed). Mix of meat, fish, and veggie courses, and everything is dressed up with fresh edible herbs and flowers. Note that the website says that if you want to upgrade the lunch tasting menu that you need to request with your reservation, but they offered the upgrade to me on the spot.
Service: Server was nice; every course was well explained. The chef even came out to explain one of the dishes.
Atmosphere: Beautiful! Not sure you can go wrong in Bruges. The restaurant is located in a quieter section, so it was really nice to sit outside and enjoy the meal!"

"One of the best dining, food, and wine experiences I have ever had. The food was innovative, the wine pairings were perfect, and featured many natural wines that were some of the best I have ever tasted. Bruno was there at every dish, explaining, sharing his vision, and it made the experience so rich and truly next level. It's not bougie, but high level rustic, perfect, not pretentious. I could list every course and tell you how beautiful and thoughtful each one was, but he adapts the menu as ingredients come available, so, don't walk, RUN to Bruut if you are in the COUNTRY of Belgium. It will be the best food experience you have had in a long time. I will be back, without a doubt."

Bruges and Ghent (updated 2025
Bruut is in a handsome building next to an absurdly beautiful bridge overlooking the canal, and inside it’s all rather convivial – leather chairs, fetching tiled floors and exposed light fittings. But there are a few al fresco tables by the side of the bridge with a gorgeous view, and that’s where I sat when I had lunch there in 2022, one of my meals of the year. Chef Bruno Timperman offers a no-choice, no-substitutions set menu for lunch or dinner and comes out to introduce and talk through many of the dishes himself.
