Named after the engineer who built the Hotel Palisade, Henry Deane is a split-level cocktail bar and restaurant that takes over the two top floors of the heritage hotel. The top floor, with its expansive harbour and bridge views through floor-to-ceiling glass windows, parquetry floors, pink leather lounges and marble tables, is a winner even before the drinks arrive. The Negroni has a clarified orange ice sphere that intravenously leaks more flavour the longer you sip it.

There’s no denying we live in a really ridiculously good looking city. Sydney possesses a truly indulgent amount of water frontage, plus iconic architecture, world-class green spaces and carefully preserved industrial landmarks as a reminder of times past – all this and we haven’t even left the harbour yet. And you can see it all from the two-tiered cocktail bar at the top of the Hotel Palisade.

It's pretty hard to miss Hotel Palisade—the grand heritage-listed pub peers over Barangaroo Reserve, Millers Point, and Sydney Harbour and is an absolute gem if you want to soak up uninterrupted Sydney Harbour Bridge views. Henry Deane is the pub's rooftop bar spread across two floors. Signature cocktails include the Agave Love, with Olmeca Altos tequila and Vida mezcal, and the Go Slow Man, with Appleton signature rum, JM Agricole, curacao, orgeat, lime, and honey, and there's a short but sweet menu of delicious bar snacks designed to be shared.

Spread across two floors at the top of Hotel Palisade in the harbourside enclave of Millers Point, Henry Deane is a contemporary cocktail lounge encased entirely in glass and providing breathtaking, up-close views of Sydney Harbour. Sip on an Old Salty Girl (which comes topped with salted caramel pearls) or a cutesy Mini Martini, as you soak up the city’s beauty, and fuel up with a mix of small plates from the Food Between a Few menu (think caviar tins and cheese boards). It’ll be impossible to stop yourself from going snap-happy!

Henry Deane: Here's another gorgeous haunt replete with history. Dating back to 1915, Palisade Hotel was one of the tallest buildings in the city when it was first built. Exactly 100 years later - in mid 2015 - it relaunched after a significant refurb, with a pub on the ground floor, eight stunning guest rooms (yes, you can stay here, too) on the second and third floors, a cocktail lounge on the fourth floor and - the ultimate jewel in its crown - the Henry Deane rooftop bar on the top floor.

The cocktail lounge is spread over levels 4 and 5 of Hotel Palisade, and serves up eclectic boozy mixes, as well as some cocktail classics. We’d recommend trying the Below The Belt (spiced woodford bourbon, apricot brandy, pineapple, whey) – it’s bloody delightful.

Next and one of my favourites is the Henry Deane located at the top of the Palisades Hotel. This beautifully restored pub sits on the hill where The Rocks meet Barangaroo and offer 360-degree views of the city, west to Balmain and the Parramatta River and east to the iconic duo we all know and love. Along with the magnificent views, the share plates and cocktails up here are excellent.
