"We’ve been here at 6th of October. My partner and I had a high expectations due to all the good reviews in google maps. We ordered pistachio, double chocolate, tomato cheese and salted almond. Unfortunately, none of the croissant pleased us. All were a bit doughy and really chewy. I felt like I am having a loaf of bread. The amount of chocolate in double chocolate is less than normal one. I am giving three starts just because I am familiar with all the hard work behind every small businesses and their affordable prices. However, I don’t think so I will have again."

Decision-making isn’t easy at this cult-favourite bakehouse in the Arts and Industry Estate precinct on the outskirts of town. Indeed, each of the ever-changing 18 or so pastries on offer – all laid out across the concrete countertop – looks more tempting than the last, with cinnamon scrolls and almond croissants pitted against the likes of mushroom Danishes and sausage rolls. Sandwiches, sourdough pizza slices and the dynamite doughnut line-up won’t help narrow it down, so grab a little bit of everything and try your best to save some for later.

Chef José Rojas, originally from Colombia, moved to Australia 15 years ago to hone his culinary skills and work in some of the top kitchens in the country. He discovered his passion for croissants while working at Sugardough Bakery in Brunswick East and saw a niche for a bakery specializing in croissants in Byron Bay.
