As for the Utase Ebi, it’s not just any shrimp dish; these small shrimps are caught using the traditional Utase-ami dragnet fishing method in Mie Prefecture. Known as Utase-ebi, they include varieties such as Southern rough shrimp and greasyback shrimp, giving the karaage a uniquely rich, delicate flavor.

Then, take it to the fishmongers and wait for it. I asked the fishmongers for help selecting the fish using google translate. They were more than willing to help me out.
